Cut the taters up into nice chunks, par boil them for about 5 to 7 mins or until they begin to soften. Drain the water and return them to the pot and proceed to shake em around. Place em in a 400 degree preheated olive oil containing baking dish with and a head of garlic separated. Roast these in the oven for about 45 mins or until taters are fluffy and crispy and garlic is soft. Serve em on up!

if your asking for Roasted Potatoes with Garlic, then you cube potatoes and cook about 45 min in oven coated with olive oil, garlic salt and rosemary.

If you asking about Roast Garlic Mash Potatoes, Roast the Garlic in the oven (cut the top off an entire bulb to expose the garlic add olive oil and wrap in foil) make the potatoes normally as you would for mashed potatoes and add the roast garlic to the potato mixutre.

if you want to make them from scratch, you can cut up potatoes into thick chunks, or however you prefer them.

make a seasoning of salt, garlic powder (or fresh minced garlic) pepper, and basil. mix up the quantities to your liking.

put the seasoning mix into a large zip-lock and toss in the potatoes, shake it up and wrap them in an envelope of aluminum foil.

make some holes in the top of the foil with a knife to let out the steam, and either toss it on the grill, or stick it in the oven

not sure about the cooking times, but you can check on them until they are nice and soft, and golden brown.

or, you can buy a bag of roasted garlic potatoes at the supermarket in the frozen foods section. mmmm

First of all use the right kind of Potatoes....the Red one's.
Dont peel them, just quarter 'em. Put on a Baking Sheet, season and drizzle with Olive Oil. Add Rosemary and start baking at 350. Add your Garlic when your Potatoes almost done, it wont burn and you still got the great Flavor......

My favorite way to do this is to wash and dry the potatoes. I personally like the skins but you can peel them if you prefer. I slice them into wedges and put into a 9x13 pan that has the bottom covered with canola oil. I roll the wedges around till they're all oiled. Then I sprinkle them with salt, pepper, garlic powder, onion powder, and paprika. Bake at 400' turning them every 20 minutes. They take 45 to 60 minutes to cook. Then I lift them out with a spatula onto paper toweling. Somebody pass me the catsup!

peel the potatos, put them on a greased cookie sheet, sprinkle with garlic and back at about 375 till done. Also adds a flair to the taste if you put some kind of seasoning like a meat seasoning. Potatos will cook faster if you use a meat tenderizer which you can get seasoned.
