I have tried different things, different heat or amount of oil, boiling the potatoes first, or not, experimenting with times, etc. Just half the time they come out deep fried and although it's nice, it was not what I wanted to make.

It sounds like you are using too much oil.
Dry the potatoes well and toss in some oil in a bowl with some salt.
Place into a preheated roasting pan and give it a good shaking. Repeat the shaking and turn occasionally
Should take about 30-40 minutes at 180C

Not sure why you are using oil in roasted potatos. If you cover the container the potatoes are cooked in, the moisture will keep them soft inside and out. If you prefer a little browning, brush with oil or butter the last 20 minutes and uncover. I put potatoes in with my roasts and have never had them fry. Moisture is the key.

Whilst heating a pan with a moderate amount of olive oil in the oven, boil the potatoes until a bit soft. When there, drain, and put back in the saucepan - then put the lid on and shake it. This makes the outers really fluffy. Then chuck them in the oven and roast for about half hour...

the fluffiness works a treat, trust me. makes them really crispy. not too much oil though!

These are my absolute favorite. Honey Roasted Red Potatoes 1 pound red potatoes, quartered 2 tablespoons diced onion 2 tablespoons butter, melted 1 tablespoon honey 1 teaspoon dry mustard 1 pinch salt 1 pinch ground black pepper Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion. Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

What u cooking them in lol. I part boil mine first then with a zester scrape around each potato and put the strands back on top drizzle oil over them and cook in oven gas mark 6 for 40 minutes. They comes out nice and crunchy :) good luck

"sensible" is right.....oil is not used in oven roasting. as he said, a smattering of butter, or olive oil (i use a mist bottle) is all that is needed. do as he suggests. i would also recommend the addition of salt, pepper, and some halved garlic cloves placed around the spuds. the garlic will add flavor to the potatoes, and can be spread on toast points afterward, as it becomes soft and mild in the roasting process.

I roast potatoes by just scrubbing them and tossing them in the oven. No oil or anything else.

I don't know what kind o oil you're using first of all but, I would suggest olive oil....if anything!! Second, turn down your heat and don't go over 325

I wash mine then slice them and wash again.I never put oil on them to roast them.You may be using too much oil and cooking too long.Are you putting them on the grill to roast?If so,then put them in foil and add a ice cube to them so they don't dry out.Good question....
