I'm doing this by memory; by betting odds and my take on significance; in order:
1. Douglas over Tyson. 1990
2. Ali (Clay) over Liston; yes, folks at the time this was a major upset. 1964
3. Rahman over Lewis. 2001
4. Barkley over Hearns. 1988
5. Laing over Duran. 1982
Honorable mention: Schmeling over Louis. 1936, Ali over Foreman. 1974. Tunney over Dempsey. 1926

All great answers, the blogbaba will carefully follow the example of Smitty, agree will all four lists and purposely make mine different:

1. Muhammad Ali over George Forman
2. Frankie Randel over Julio Cesar Chavez
3. Esteban DeJesus over Roberto Duran
4. Bobby "Boogaloo" Watts over Marvin Hagler
5. Julio Cesar Chavez over Meldrick Taylor

I didn't want two Chavez fights in my top five, but I didn't consider Frazier/Ali one or the Jimmy Young win over George Forman as big an upset, so I had to give Chavez his due. Excellent Question, all great answers.

Tyson/Douglas (42-1 odds, wasn't it?)

Sullivan/Corbett (in hindsight it doesn't appear too shocking, but back then this upset literally shocked the entire nation)

Braddock/Baer (before Tyson/Douglas, at 15-1 odds was the biggest upset in hw championship history).

Curry/Honeyghan (even Eddie Futch was on the Curry bandwagon. Said he was gonna beat Hagler!).

Liston/Ali (if only Sonny would have trained! We may have had a much different result)
