If the engine overheats right away, that could be a sign of the thermostat stuck closed. It could be other things too, but that's what happens if it's stuck closed.

If it never seems to warm up to operating temperature, that's a sign it could be stuck open. The coolant will get warm, but not hot, and you won't have any real heat out of the heater/defroster.

1) engine temperature indicator is lower or higher than "normal" for your car
2) heater won't give heat
3) radiator "boils over" when not an extremely hot da

"too hot" can be cause by other things, like blocking air to radiator. too cold must be the thermostat.
