This is a simple recipe but BOY is it good (and people love it!)
Make a basic cake. I use Betty Crocker Yellow cake or (if money is tight) the Jif Yellow cake. Follow the recipe on the box. You want to bake it in a rectangular pan - maybe 16x10.
Allow it to cool. Prepare your FAVORITE pudding.
Now, take a big wooden spoon and use the handle to push holes into the cake. Make rows of them - maybe 4 across and 8 down. Now, ice the cake with your pudding. The pudding will go down into the holes as well as cover the top.
The possibilities are endless with this. Chocolate pudding is my favorite. I have also used banana pudding and then placed some vanilla wafers on top. And for a chocolate rush, use a fudge cake with fudge pudding!

I too like puddings. I think my very favorite though is tapioca pudding.
1/3 cup sugar
3 tablespoons tapioca
2 3/4 cups milk
1 egg, slightly beaten
1 teaspoon vanilla
Combine sugar, tapioca and egg in saucepan. Stir and let stand for a few minutes. Cook over medium heat stirring constantly until mixture comes to a full boil. Remove from heat. Stir in vanilla. Cool about 20 minutes. The pudding will thicken as it cools.
I love tapioca served warm, but you can serve it chilled. When they are in season, I top chilled pudding with fresh raspberries or blueberries.
Another favorite is rice pudding.
1/2 cup rice
1 1/2 cups boiling water
2 eggs
1/2 cup sugar
1 tablespoon dark rum (optional)
1/2 tsp. salt
1/4 tsp. nutmeg
2 cups milk
1/4 cup golden raisins
Measure out raisins and soak them in a teacup with 1 tablespoon of rum (you can use hot water instead of the rum).
Select long or short grain rice (I like the short best for pudding - do not use Minute Rice for this recipe). Wash the rice thoroughly until the water runs clear in cold running water; drain. Sprinkle rice into boiling water.
Cover and cook over low heat until all the water has been absorbed and rice is tender. This should take about 20 minutes.
In a mixing bowl, whisk eggs. Stir in sugar, salt and nutmeg, milk, cooked rice and raisins.
Transfer mixture to a buttered 1 quart ovenproof baking dish.
Bake at 325°F for 1 1/2-2 hours.
I sometimes stir in a few drops of vanilla during the last 30 minutes of cooking for a little extra flavor.

ICE BOX CAKE
1 box yellow butter cake mix
1 pt. sour cream
1 lg. can crushed pineapple
1 c. sugar
3 tbsp. cornstarch
8 oz. Philly cream cheese
1 box powdered sugar
1 stick butter
1/2 tsp. vanilla
Bake cake as directed. After the two layers are cooled, cut in half to have four thin layers.
ICING: 3 layers on each cake. 1. sour cream; spread thin on each layer. 2. pineapple mixture; pineapple, sugar and cornstarch; mix and heat until thick and spread thin on each layer; 3. Cream Cheese Icing: mix cream cheese, powdered sugar, butter and vanilla (if too thick add milk). Spread thin on each layer. Stack layers and frost sides only with cream cheese icing. On top put sour cream, then cream cheese icing, then all remaining pineapple mixture.

Ice Box Cake
(serves 9)
Ingredients
3 ripe bananas
about 10 graham crackers
1 pkg. of vanilla pudding, use directions on package
Directions
Line bottom of 9 by 9 pan with graham crackers. Add some of the pudding on top. Add sliced bananas on top of that. Continue to layer these 3 ingredients and chill. Add some sprinkles on top.

The one on the Nilla Vanilla Wafers box is good. It is a cooked vanilla pudding and does not taste as sweet as the commercially prepared ones.
Trick on bought puddings--add a teaspoon of real vanilla flavoring after cooking, stir.

my daughter was tilling me how much she loved it when i would make this, BREAD PUDDING. A loaf of raisin bread. torn into small pieces. l can apple sauce mixed BR and white sugar. to taste. start with 1/2 cup add extra plumped yellow raisins. milk or cream. bake till its done.
