Because it doesn't make sense and because it's a concept invented by Church.

The point is not so much that it's incomprehensible, but that it's such a kludge. It's plain that the Triune God notion was invented in order to shoehorn JC into godhead, without usurping the existing 'God the Father' who'd supposedly been around prior to him. Cramming the 'Holy Spirit' in there as well was a piece of misdirection.
Overall, it's just a way to have polytheism while still being monotheistic. And it looks frankly silly.

For that very reason it is called a Trinity. Trinitarians will argue that God can be whatever he wants whenever he wants but it is faultily logic that God would take on ONLY 3 parts if God is infinite.
Jehovah would not mimic a false trinity God and give it his name.
Ne 9:18 even though they made an idol shaped like a calf and said, `This is your god who brought you out of Egypt!' They sinned and committed terrible blasphemies.
2Ch 33:17 but still the people are sacrificing in high places, ONLY -- to Jehovah their God.

It's not incomprehensible. Pagans understand it quite well, as many of our cultures include Triune Gods and Goddess'. It's not anything new. I think some claim that one can't understand it, is because they want it to be a "Mystery" of some sort... maybe trying to make it appear as if this Trinity is somehow different than all the Pagan ones. They aren't different at all... actually, the storyline follows many of the "Myths" given to Roman and Greek Gods. =)

--IS IT DIFFICULT to say, as in the trinity, that a family of three--father, mother, and son--ARE all the same person at the same time?
--IS IT DIFFICULT to say that the sun, earth & moon are the same celestial bodies at the same time?
--IS IT DIFFICULT to say that your dog, cat and canary are all the same animal at the same time?
---IT IS EXTREMELY difficult to say that Jehovah God --who is the Holy Father, Christ Jesus--who is the holy Son & the holy spirit--that is God's active force can possibly be the same entity & at the same time! WHY!
--BECAUSE the Bible defines them as 2 separate HOLY individuals & 1 HOLY thing!
---IS THE TRINITY reasonable or non-sensical, silly?
--DOES THE BIBLE highly recommend the use of reason?
--DOES THE BIBLE say that christians need to be very reasonable?
--HAVE YOU SEEN any where in the Bible , where God & Christ were not REASONABLE?--I haven't, THUS:
(Romans 12:1) “12 Consequently I entreat YOU by the compassions of God, brothers, to present YOUR bodies a sacrifice living, holy, acceptable to God, a sacred service with YOUR ....power of reason.”
(Ephesians 5:16-17) “. . .. 17 On this account CEASE( my caps) becoming unreasonable, but go on perceiving what the will of Jehovah is. . .”
(Philippians 4:5) “5Â Let YOUR reasonableness become known to all men. The Lord is near.”
--"THE BIBLE IN LIVING ENGLISH" READS:
"Let your reasonableness be conspicuous...."
--SO THEN which is reasonable 1+1+1=3 OR 1+1+1=1?
--PLEASE USE some reason it is essential in TRUE WORSHIP!

When Jesus was being baptised, just WHO spoke out of heaven.
It can only have been his Father. Separate, like ALL our fathers.
If Jesus is 'part' of the person of God, then one third is on earth and the other two thirds is somehow in heaven, saying;
(Mark 9:7) And a cloud formed, overshadowing them, and a voice came out of the cloud: “This is my Son, the beloved; listen to him.”
The Trinity makes no sense.
Jesus is separate from his Father and is in total AGREEMENT with his Father.
But he cannot BE his Father.

That belief comes from ancient Babylon.
There is no scripture in the bible that supports the Trinity.
Jesus always told his followers that the Father was greater than Him.
"Those words are found at Deuteronomy 6:4. The Catholic New Jerusalem Bible (NJB) here reads: "Listen, Israel: Yahweh our God is the one, the only Yahweh."* In the grammar of that verse, the word "one" has no plural modifiers to suggest that it means anything but one individual."
"The Christian apostle Paul did not indicate any change in the nature of God either, even after Jesus came to the earth. He wrote: "God is only one."—Galatians 3:20; see also 1 Corinthians 8:4-6."
Thousands of times throughout the Bible, God is spoken of as one person. When he speaks, it is as one undivided individual. The Bible could not be any clearer on this. As God states: "I am Jehovah. That is my name; and to no one else shall I give my own glory." (Isaiah 42:8) "I am Yahweh your God . . . You shall have no gods except me." (Italics ours.)—Exodus 20:2, 3, JB.

When I was a catholic i was constantly told in school that the "mystery" of the trinity was too complex for humans to understand. But it always seemed pretty simple to me. I don't understand what the fuss is about

I don't think it is unreasonable for humans to apply human standards to God. It is all we have to work with outside of the holy texts and fantasy. All religions anthropomorphize God, even those that claim not to.
Personally I believe that it is not possible to understand God. We can get closer to God and build relationships with God, but it still is God we are talking about.

1 Corinthians 2:14
The man without the Spirit does not accept the things that come from the Spirit of God, for they are foolishness to him, and he cannot understand them, because they are spiritually discerned.
They are in the darkness people in the darkness can't see into the light unitl they open the Door. Jesus is the Door!

Some people can't get "These three are one" (1 John 5:7) clicking in there heads.
It is a mystery.
God is supreme and we are human.
