Asian noodle salad
Serves 1
Preparation time less than 30 mins

Cooking time less than 10 mins
Ingredients
½ fennel bulb, shredded on a mandoline
1 carrot, peeled, shredded on a mandoline
1 lime, juice only
2 tsp sesame oil
small bunch fresh coriander leaves
30g/1oz bunch of rice noodles, cooked according to packet instructions

Method
1. In a large bowl mix together the fennel, carrot, lime juice, sesame oil, coriander and noodles.
2. To serve, place noodles onto a plate.



Summer sandwich fillings
Serves 4
Preparation time less than 30 mins

Cooking time no cooking required

Ingredients
For the sundried tomato and basil spread:
½ lemon, zest and juice
3 tbsp sundried tomato purée
1 tbsp ground almonds
15g/½oz basil leaves
salt and freshly ground black pepper

For the quark and avocado topping:
200g/7oz quark (low fat cream-style cheese)
½ avocado, peeled and chopped
½ lemon, juice only
12 cherry tomatoes, quartered
15g/½oz coriander or parsley, chopped
salt and freshly ground black pepper, to taste



Method
1. For the sundried tomato spread, mix the lemon zest and juice with the tomato purée and ground almonds to form a thick paste.
2. Chop the basil and stir in. Season with salt and pepper to taste.

1. For the quark and avocado filling, mix the quark with the rest of the ingredients and season to taste.

Microwave smores!
Heat the Hersey's chocolate and gram crackers a little,
then add 2 marshmellows and finish heating. Not too long on the marshmellows though.

This one isn't too bad.....
lay out a slice of ham, spread with cream cheese, add a whole pickle, roll the pickle up inside the ham and cream cheese, then cut into slices. lay out on plate with toothpicks.

Any sandwich, french toast. pancakes, waffles, salads. Cheese and crackers. And if you are handy around the kitchen and your fridge and freezer is well stocked, nachos, french fries (from frozen), chicken nuggets and pizza.
