A friend is moving from Los Angeles to the South. We need to put some weight on him (with his consent).
I'm making Potatoes Au Gratin.
Basic Recipe:
8 peeled, sliced potatoes
Sliced garlic
2 cups of heavy cream
1/2 pound of shredded cheddar cheese
Instead of the heavy cream alone, I'm going to make a white sauce using lard and flour and 1/3 cup of parmasean cheese.
I'm also going to fry some bacon and add the crumbles. I'll add the bacon grease to the cheddar cheese.
What else can I add without taking away from the recipe?

I don't know, but butter would be just as fattening as lard, but taste better.

Ok, if you folks are really wanting to fatten your buddy up because he or she is seriously underweight, then I'd keep nutrition in mind so that he doesn't increase his cholesteral and raise his blood sugar while he's at it. Consider all of the food groups while you're working on this and add calories too. To inundate him/her with fat at this point might end up making him/her full and sick. Here are some thoughts:
1. Fruit Smoothies with Banana, Malted Milk Powder, and Ice Cream.
2. Real potatoes, mashed and otherwise, but made with low fat butter substitute. Add these to 6 -8 oz of lean meat and 2 cups veges, and you have a balanced meal.
3. For breakfast try an egg white omlette, whole grain toast with butter and jam, bacon and juice.
4. Eat snacks regularly such as granola, lowfat cheese and crackers, low fat ice cream, toast with butter and such
5. Cut down on the exercise, but increase weight lifting
Your buddy might want to check with his/her doctor to see why they are so thin and to look at how to gain the weight they need appropriately.

forget the roux, lard is not the kind of "fat" he needs. potatoes, rice, pastas.... these are high carb foods and would be helpful in putting on a few pounds.... when gaining weight it is just as important to eat healthy as when trying to lose it. (also adding the extra bacon grease may just cause him to crap it out more quickly, especially if his digestive system is not ready for it)

Nope. That's about as fattening a product without it turning inedible.
But frankly, a double scoop of ice cream before bed will work wonders in 2 weeks and it's far less work.

Looks like you have it covered but is this the only thing he's going to eat? For how long. Just once isn't going to do a thing, if anything if he's fit it will jump start his metabolism and he could actually not gain a lb. I'd focus on fat-laden Ice Cream three times a day, but in any event I'd have him consult with his physician before doing anything. Only my opinion.
