There is soooooo much great food in Italy. I lived in Florence for a while and can offer a few recommendations.......Acqua al 2 is a great place, you can check it out here:

They have "sampler platters" of pasta so you can taste a bit of everything. It's great for your first trip to Italy.
If you take a turn off the "beaten path" you're sure to find something good. Restaurants near large tourists sites are often over priced and not as authentic. Another good spot is Osteria de Benci. Here's a review:

Trattoria Za-Za has really great pasta too and it's really close to a huge indoor market, which is definitely worth checking out. Here's a review:

Oh, and so you know, Florence has really good Chinese food!

As said one of the guy, every region in Italy have their own style of food. If you are planning to go to Firenze you most eat their typical plate "Bifteca alla Florentina" that's a huge t bone steak that you never found in USA for the flavor and size, the best place to eat this is in Trattoria Mario, in here you only found Italians and this place only open for lunch (11:00 am to 3:00 pm and was close on Sunday) there are at Via Rosina 2/r Firenze, near them is Trattoria Za-Zá I don't recommend this one because is so tourist and the price your going to pay for the food is not a go deal. In Rome I can give you a name because I don't remember. In Venice when you get out of the train station and you cross the bridge that was on your left go directly to the restaurant you see in that street at your right that have tables outside, the food is awesome and the price too. But remember where ever you decided to eat, is a good choose the food in Italy are the best!

You can get excellent pasta almost everywhere. In Florence I suggest "osterie" instead of "resturant". Osterie are more tipically and cheaper, food is great everywhere! In Rome you should look at the "Trastevere" area (full of great restaurant).
Enjoy your trip and don't forget that each place has it's typically food, so just try!
