Hi !!
This is the way we make it in the South...

OLD SOUTH AMBROSIA

Ingredients

1 fresh coconut
1 can crushed pineapple, with juice
2 apples, chopped
1/2 cup pecans, coarsely broken
5 oranges
1 can fruit cocktail, with juice
2 bananas, sliced
sugar to taste **ACTUALLY I ADD FRESH WHIPPING CREAM BEATEN WITH SUGAR & THEN I MIX IT IN THE FRUIT MIXTURE.**

Cherries for garnish preparation.
Grate coconut in bowl. Add peeled and sectioned oranges; discard membrane and seeds. Add pineapple, fruit cocktail, apples, bananas, and nuts. Sweeten with sugar, being careful not to add too much as the syrup from the fruit is usually sufficient. Chill before serving. This dessert is pretty garnished with cherries and served in a crystal bowl.

FRUIT AMBROSIA

AMBROSIA:

1/2 c. orange juice
1/4 c. honey
1 tbsp. lemon juice

FRUIT:

3 kiwi fruit, peeled & sliced
1 (20 oz.) can pineapple chunks in juice
2 (11 oz.) cans mandarin oranges
1 1/2 c. red seedless grapes
Other optional fruit, such as sliced nectarines, peaches, apples (peeled or unpeeled); sliced bananas; halved strawberries; melon balls or chunks

Note: Select fruits with color in mind, as well as flavor. Stay away from blueberries, they'll color everything with an unappetizing bluish tinge!

TOPPING:

Shredded coconut

Reserve the pineapple juice in a small bowl. In a large bowl, mix together the pineapple chunks and all other fruit. Add orange juice, honey and lemon juice to the pineapple juice and stir to mix. Pour juice mixture over fruit in the large bowl and stir so all the fruit gets coated with juice (this will prevent the apples and bananas from changing color).
Cover and chill in refrigerator at least 1 hour. Serve the coconut separately as a topping so it doesn't get soggy. This can be made the night before and is a perfect light dessert for a barbecue or picnic.

Serves 6-8.

AMBROSIA RECIPE


6 medium apples (preferably mellow 'Golden Delicious' )
1 12 oz. can concentrated frozen orange juice
1 14 oz. can crushed pineapple
1 14 oz. pack of shredded coconut

Peel and core the apples. Grate apples on the coarse side of a grater. Mix with the frozen orange juice, the pineapple and the coconut. Add about an orange juice can of water (according to how soupy you want the mixture to be). Mix ingredients thoroughly.

This dish can be served immediately. For the best flavor, make it a day ahead of time. Before serving you can add any ingredients to your taste: nuts, grapes, cherries, small marshmallows, etc.It can be saved for three days if kept in the refrigerator.

Your guests will never know that you did not tediously section oranges for this, so do not feel that you have to tell them. However, you may want to share this recipe with your best friends and relatives. It makes holiday entertaining so easy and refreshing!

Heavenly Ambrosia
A typical ambrosia or fruit salad can be loaded with calories. This recipe uses canned fruit packed in juice instead of syrup, yogurt instead of sour cream, and a reduced amount of coconut.

Ingredients
3 c Miniature marshmallows
1 (15 or 20-ounce) can crushed pineapple (in its own juice), drained
1 (15 or 20-ounce) pineapple chunks or tidbits (in its own juice), drained
1 (15 or 20 ounce) lite peach slices (in its own juice)
1 (11-ounce) can Water-packed mandarin oranges, drained
1 1/2 c Fat-free tropical fruit flavored yogurt
1/4 c Well-chopped walnuts
3/4 c Flaked coconut

Preparation
Chop the peach slices into bite sized pieces. In a large bowl, gently combine the marshmallows, crushed pineapple, pineapple chunks or tidbits, peach chunks, oranges, yogurt, coconut, and chopped walnuts. Cover and chill in refrigerator (preferably 2 hours but at least 1 hour) before serving.

This recipe is Heavenly!

Allright, you're going to need some shredded (or grated) coconut, some pecan halves of chunks and a few oranges.

All you have to do is peel the oranges, seperate them into sections and then cut those sections into small bite sized pieces. Throw them into a bowl, add the coconut and pecan (I prefer to break the peices up a bit), toss the whole works with a serving spoon and referigerate.

This is a simple delight. My mom likes to sprinkle the oranges with a little confectioners sugar if they are out of season or aren't very sweet.

Heres one recipe. 1med can fruit cocktrail drained(or canned pineapple tidbits) about 1/4c coconut, approx 1/4 c sour cream, about 1/2 bar of cream cheese, chopped nuts (whichever you like) 1 chopped apple and some mandarin oranges med can drained
I think originally it was pineapple , coconut and sour cream, but I've seen recipes with all the rest. At Christmas , I chop a red apple and a green apple and put in. Oh , yes and little marshmellows and halved grapes.Sorry I don't have proportions but just put in to taste.
