i answered this question 3 times before & this is my tried & true method .. perfect results everytime too..
it is better to start with at least one week old eggs for easiest peeling.
cover eggs with cool water at least an 1.5 inch above the eggs. bring to a complete boil as soon as it does cover & remove from heat let sit for 25 to 30 minutes, keep covered no peeking during this time either..
then drain and run cold water over eggs to cool then put in fridge. after the eggs are cold they are ready for salad or what ever you are going to use them for.
if want to eat them hot just run under cold water to cool enough to handle then peel.
i have never had grey/green edges on my yolks with this recipe. & i don't add salt or vinegar with this recipe, & i have never had a cracked egg yet.

Put your eggs in a kettle with COLD water and add just a little salt (about a half teaspoon) to keep the shell from sticking. Bring to a boil and boil for around 10 to 15 minutes, then remove from heat, cover and let sit for another 10 minutes or so. Rinse with cold water and peel.

I usually do 8-10 minutes. I should add that you have to put the eggs in the water and THEN bring it to a boil. This might seem like common sense but I know people who have dropped eggs into boiling water and wondered why their eggs were exploding. So. Yeah.

Fill a pot with cold water so that it's about 1/2 inch over the top of the eggs. Put the eggs in, and put the pot on the stove and bring the water to a boil. As soon as it is boiling, remove it from heat, covered, and let it sit for about 18 minutes. Take the eggs out and drop them in cold water before peeling. To peel, hit them gently with the back side of a butter knife, and then use your fingers. You can cut them into slices and put salt and pepper on for taste.

I am a Chef, in my youth, we actually experimented with how to do a perfect boiled egg......After more than a flat of eggs and alot of laughs, we cracked the recipe....(see above)
No seasoning will penetrate the shell. save the salt for the delicious inside. Only altitude above sea level changes the temp of boiling water. Vinegar is for poaching eggs...thats a whole different story.

No salt needed. Bring pot of water to a boil. Turn off burner. Add room temperature eggs and let sit 15-18 minutes depending on size of egg. Allow to cool a bit in cold water & tap/roll the eggs to crack the shell. Peel under cold running water.

You can salt the water and it will help keep the eggs from cracking. Also, people have used Five Spice in a crock pot to slow cook eggs. Their called 5 spice eggs. Yummy good.
