I don't have enough info about what exactly you are making to give you options but in general you can use egg substitute or EnerGy egg replacer which is a powder diluted with water. For soups you can substitute flour (my mom does this all the time).

I substitute all the time due to food allergies.
Try applesauce, cream or milk, juice
about 2T of any of those.
you will get a cookie a bit less rich and much more crumbly.
you could even use water in a pinch, but you might want to up some other flavor...
I haven't tried before but sour cream or yogurt might evenwork.
I have gotten pretty brave at trying just about any liquid. What is there to lose?

You'll have to go out to the grocer's anyway, so just go get some regular eggs!
