I've got a heap of fresh limes and would like cook something with them and am not sure what. I have already used them for salad dressings and drinks. Any suggestions would be helpful.

LIME CHIFFON PIE

1 envelope gelatin
1/4 c. water
3 egg yolks
1/2 cup granulated sugar
pinch of salt
1/2 c. fresh lime juice
1 tsp. grated lime rind
3 egg whites
1/2 cup granulated sugar
whipped cream, optional

Bake a prepared pie shell.
In two small bowls, break and separate egg whites from yolks.

In a quarter of cup of water, soften one envelope of gelatin.

In a double boiler, combine 1/2 cup of sugar, 3 egg yolks and a pinch of salt. Stir constantly until thickened. Stir dissolved gelatin slowly into custard (hot egg mixture). Stir in grated lemon rind and fresh lime juice and allow to cool.

Beat the three egg whites, adding sugar gradually until soft peaks form. Fold egg whites gently into cooled custard, being careful not to deflate. Turn out into pie crust and spread smooth.

Chill at least 1 hour. Top with whipped cream, if desired.

LEMON LIME DELIGHT

3 tbsp. butter
1/2 cup sugar
2 tbsp. flour
1/8 teaspoon salt
2 egg yolks, well beaten
1/3 cup lemon juice or lime juice
1/2 teaspoon grated lemon of lime rind
1 c. milk
2 egg whites
1/4 cup sugar

Allow butter to soften slightly to room temperature. Combine the 1/2 cup sugar, salt, and flour in bowl of mixer and cream until smooth. Add egg yolks one and a time beating on low speed 30 seconds after each addition.
Stir in lemon or lime juice, grated rind, and milk.

In separate bowl, beat egg whites until they hold a stiff peak, gradually adding 1/4 cup sugar. Gently fold in the beaten egg white mixture into the butter and other ingredients.

Pour into a lightly greased 1 qt. casserole or pudding dish. Place in a pan of warm water, with the water about 1 in. deep. Baking in a 350 degrees Fahrenheit oven 50 to 55 minutes. Serve warm or cold.

You could make some shrimp quesadillas. Take some uncooked shrimp, add some lime, cayanne pepper, parsley, and cumin. rub that on the shrimp, and quickly seer them in a stainless steel pan. Dont TOTALLy cook the hrimp, because when you grill the quesadillas, the heat from the cheese and steam that builds up will cook them the rest of the way. You can use whatever cheese you want, as long as it is a bit on the soft side, so it melts well. Then take a flour tortilla, put some cheese, then a bit of shrimp, then more cheese to cover the shrimp, and finally add a tortilla on top, put it in a large pan, and grill until the tortillas are a nice goldren brwon color, and the cheese is melted and hot.

There are lots of really great recipes that use limes. Some of my favourites include using them in marinades for chicken or fish, substituting lime juice and zest in my lemon meringue pie recipe or making a lemon, lime and pear tart. Also some lemonade and lime juice frozen in icy pole moulds is a really refreshing option on a hot day.

Put them through a juicer and freeze the juice in small plastic bags and use the juice as you need it for different things. A few limes go a long way.

Ceviche is raw fish marinated in lemon and lime juice. I have ate tons of Ceviche and yet to get sick. The acids are supposed to "cook" the meat. I have yet to try raw ground beef. I love my steak bloody...but I know ground beef and eating it raw is not for me. edit: ground beef has too many processes that can take on bacteria. Steak is basically butchered and sold, no processing. nothing that can contaminate it. I sear my meat on the BBQ and then eat it. Raw ground beef is no bueno. blood and juices make the steak....um ummm ummm yummy anyone that puts A1 or Whorstishire on a bloody steak, doesnt know how to eat good meat.

Queeze it on chicken or plain salmon, make a lime pie, put it on the glass of a cocktail, or make lime juice!

Marinate fish, chicken, or pork with fresh lime juice, olive oil, and garlic!!!

You could also add a little ginger!!!!

Lime is also good squeezed in green tea.
