Depends on how much meat you're using. I generally use 2 pounds and only one egg. I use bread crumbs, not crackers, and I just add them until I get the texture I want.

Cracker Meatloaf

FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.
Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour

Only one egg is good enough for the biggest meatloaf. I make 3 pounders. Two eggs just makes it to sticky. Crackers? depends on how much meat you start with, but i'd say 1/2 cup per pound of meat.

Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

I use 1 whole egg or 2 egg whites per pound of chop meat.

Use about 1 cup crushed crackers for 1 pound of chop meat if using 2 pounds of meat use 1 1/2 cups.

If making an average loaf pan size meatloaf, I would add one egg and 10-12 crackers. I love meatloaf. Bet yours will be delicious.

For each pound of ground meat, I use one egg and about 1/3 cup of bread crumbs (or cracker crumbs). I also use 1/2 (8 oz) can of tomato sauce in the meat loaf and pour the other half on top before baking - keeps it really moist!
