Macaroni Cheese
Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
570ml/1 pint milk infused with ½ onion (peeled)
6 whole black peppercorns, 2 bay leaves
1 tsp thyme and 2.5g/½ tsp grated nutmeg
50g/2oz butter
25g/1oz flour
salt and freshly ground black pepper
175g/6oz wholewheat macaroni
175g/6oz grated cheddar cheese
1 tbsp freshly chopped parsley
Method
1. First infuse the milk by bringing it up to the boil with the onion, spices and herbs.
2. Remove the pan from the heat, cover it and allow the milk to stand for 10 - 15 minutes, then strain it.
3. Meanwhile melt the butter over a gentle heat in a clean saucepan. Add the flour and cook this roux for 2 - 3 minutes.
4. Pour over the infused milk, stirring all the time and bring the sauce gradually to the boil.
5. Season well and then allow the sauce to simmer for 3 - 5 minutes, stirring occasionally.
6. Meanwhile cook the macaroni in plenty of boiling water for 8 - 10 minutes.
7. When it is just cooked, drain and put into a warm serving dish. Quickly stir in 110g/4oz of the grated cheese and the chopped parsley into the white sauce, then pour this over the cooked macaroni.
8. Cover with the remaining cheese and grill the dish for 5 - 7 minutes until the cheese is bubbling and golden.
9. Serve straight away.

I'm just "nuts" about using "RO*TEL" diced tomatoes & green chilies...
Original RO*TEL Recipe
BAKED MACARONI and CHEESE
Ingredients:
3 cups uncooked elbow macaroni
1/2 cup margarine
1/2 cup all-purpose flour
2 cups milk
1 lb. shredded cheddar cheese
1 can (10 oz.) RO*TEL Diced Tomatoes and Green Chilies
Directions:
Preheat oven to 375 degrees F. Cook macaroni as directed on package;
drain and set aside. Melt margarine over low heat. Stir in flour; cook
1 minute, stirring constantly until mixture is smooth and bubbly. Stir
in milk; heat to a boil; stirring constantly. Reduce heat and simmer until
thickened, about 1 minute. Add cheese and RO*TEL. Stir until cheese
is melted, then remove from heat. Stir macaroni into cheese sauce.
Transfer to an ungreased 9 x 12-inch baking dish. Bake uncovered 30
minutes or until heated through. Serves 10.

Macaroni & Cheese
1 lb. (16 oz.) Velveeta Light Pasteurized Process Cheese Product, cut up
1/4 cup milk
2 cups (8 oz.) elbow macaroni, cooked
Dash ground black pepper
Stir Velveeta Light and milk in saucepan on low heat until smooth.
Stir in macaroni and pepper. Spoon into 1-quart casserole.
Bake at 350 F for 20 minutes.
Makes 4 servings

Marie's Homemade Mac and Cheese
Original recipe yield:
16 servings
INGREDIENTS
2 pounds uncooked elbow macaroni
2 (10.75 ounce) cans condensed Cheddar cheese soup
4 eggs, beaten
2 3/4 cups milk
2 pounds Cheddar cheese, shredded, divided
salt and pepper to taste
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
In a 9x13 inch baking dish combine soup, eggs, milk, half of the cheese, cooked macaroni, salt and pepper. Mix well and then top with remaining cheese.
Cover and bake 45 minutes in the preheated oven. Remove cover and bake for another 10 to 15 minutes, until top is lightly browned.

BUT...
macaroni and cheese.....hmmm...its a fantastic reminder why I got married and left home.
Cos I don't ever have to suffer it again!!! LOL

Crock pot macaroni and cheese
16 oz. box of macaroni (for 5 qt. pot)
3 large cans of evaporated milk
3 cups shredded cheese, cheddar or whatever kind you like best
3 eggs
1 stick melted margerine
salt and pepper to taste
1 tablespoon sugar
Mix all together and put in crock pot. Cook on low 3 hours. Add a little extra cheese on top if you love it real cheesy.

Chili Macaroni and Cheese:
30 min 10 min prep
4-6 servings
2 (15 ounce) cans chili with beans
1 cup macaroni noodles
1 cup cheddar cheese, grated
1 small onion, chopped
1 tablespoon italian seasoning
1 teaspoon salt
Tabasco sauce
1. Cook macaroni as directed on package.
2. While Macaroni is cooking heat chili.
3. Add Italian seasoning, salt, and Tabasco sauce (I like 4-5 squirts) to chili.
4. Mix onion, chili, and macaroni in large bowl.
5. Put mixture in a casserole dish and add cheese.
6. Bake for 10-15 minutes in a 350 degree oven, or until cheese melts.
7. Serve and enjoy!

Baked Macaroni and Cheese
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

Ingredients:
5 C Lrg. Elbow Macaroni
1/2 lb. Extra Sharp Cheddar Cheese, grated
1/2 lb. Longhorn Cheddar Cheese, grated
1/2 lb. Mexican Ranchero Cheese, crumbled
1 C Milk
1 1/2 C Crumbled Cheeto’s
Prep:
Cook the Mac al dente, not quite done
Combine all the Cheeses
Layer Cheese and Mac, Cheese and Mac, (you get it)
Pour in the Milk
Top with Cheeto’s
Bake 45 min. @ 350
Kids love this with hotdogs on top (the last 10mins)
