For the last three weeks, I've been experiencing difficulty every time I try to eat. Even if I eat slowly, I become full very quickly, even to the point that I become nauseous all of a sudden and sometimes have to vomit, along with severe pains right under my chest.

When I am able to keep my food down, I have terrible, "muscous-y" diarrhea along with intestinal cramps for three to four hours after eating.

I have been to the ER, and they've just treated me for gastroenteritis. I don't have health insurance and I don't want to see a general physician unless absolutely necessary. Does anyone have any idea what the cause of my troubles could be?

It could be many things: IBS (Irritable Bowel Syndrome), diverticular issues, or gallbladder.
Try looking at these symptom sites to get an idea:

But, self diagnosis is not the best option. Digestive problems like this will take a heavy toll on your body and you could end up in the hospital. How much is your health worth?
Hospitals will take minimal monthly payments. I've been in your situation and had to have tests which weren't cheap. But, I made arrangements with the hospital to make payments and in time I got it paid off and more important, I could sleep at night.

Do the severe pains right under your chest happen AS youre swallowing food??? Cuz that could be a sign of a problem in the esophagus. Do you get regular heartburn? Cuz if so, that can cause the esophagus to scar, and sometimes get tighter, called a stricture. It can also cause you to 'spit up' or 'vomit' food that cannot be swallowed. It can also cause you to feel like youre full very early in eating. Look into it.... but work on getting health insurance and seeing a doctor. :)

Oh, I should add that if it is a stricture, the treatment is relatively easy.... they go in with a scope and stretch your esophagus back out.

It is possible that you could be suffering from IBS (Irritable Bowel Syndrome) the only way to know for sure though is if you were to go to a doctor who specializes in gastric medicine. Hope this helps.
