If you flooded the Earth during Noah's boat ride, what did all the animals eat when you finally let them back on dry land again?

The whole Earth may not have been flooded. The flood could have simply flooded enough of the Earth to wipe out all of Humanity, except for Noah's family.

Also if God is powerful enough to cause such a universal flood wouldn't He be able to care for the surviving animals?

How long were they on the ark? Actually it rained for 40 days and 40 nights. They entered in the second month. In the seventh month on the seventeenth day of the month the ark rested. In the tenth month they could see the tops of the trees. So Just short of a year they were on the ark. They left in the second month on the seven and twentieth day of the month. (Gen 8:4-5 7:11 8:13-14).

Things were probally a mess after the flood but there were likely seeds that sprouted and provided vegetation while Noah and family were inside the ark. Its also speculated the flood might of not been global. If we consider that God exists outside the dimension of physical time we should realize that hes not limited to the laws of physics he made those laws he can defy them if he decides to. So anything is possible.

Luke 18:27
And he said, The things which are impossible with men are possible with God.

Well if you read : Genesis 8:4-14 you will find that the dove brought back an olive leaf and when he opened the door he saw that the land was dry. In other words the earth had been reborn it was not a dry sea bed.

Genesis 1:11
Then God said, “Let the land sprout with vegetation—every sort of seed-bearing plant, and trees that grow seed-bearing fruit. These seeds will then produce the kinds of plants and trees from which they came.” And that is what happened. He probably just did that again.

Noah kept them on the Ark long enough for a wind to dry the ground and weeds don't take long. If that doesn't satisfy you, Manna is heavenly bread from God.

Well, remember that Noah let out a dove from the ark, and it returned with a branch? Therefore, vegetation must have been present.
