They do all sorts of things!
They're the primary source of nutrition for other organisms (herbivores, bees, etc). They produce oxygen (and get rid of carbon dioxide). They provide a place for bacteria (such as nitrogen fixers, which for a long time were the only source of organic nitrogen before we invented the Haber-Bosch process) to live and cycle elements like Fe, C, O, N and S in the root nodules.
They provide shading, which is important in warmer climates (think of leopards chilling in a tree in Africa).
They are the main habitat for some creatures (birds, etc), and a convenient way for others to get around (monkeys, snakes, bears).
They can also be a source of water - some animals drink water from cacti.
They help in the cycle of organic carbon; if nothing eats a plant, it will decay and be digested by detritovores, which put the carbon back into useful forms for other organisms.
They can provide cover, either for predators to search for prey or for prey to escape and hide.
They can be used to construct things - think of beavers.
They're also beautiful and worth conserving!

well, we wouldnt be here today if plants didnt exist... the give out oxygen and carbon dioxide, give us food, and without them no animals would be alive because all animals depend on plats in the food chain. if an animals that eats plants doesnt have plants it will starve and then the will die out, and so will the things that eat them. this will continue to happen until everything dies.
