Popcorn is made froma certain species of corn. What we eat as "niblets" or ears sold in the supermarket is a different variety of corn than popcorn is.....

There are several different types of corn: dent corn, flint corn, sweet corn, and popcorn.

Popcorn comes from a different variety than what comes out of a can.

Popcorn has a hard skin and is moist on the inside. As the kernal heats up, the water trys to expand, but the hard skin prevents it from expanding.

Eventually, the pressure inside the skin is so great the the kernal has to explode.

The reason some kernals do not pop, is because their skin was too thin or weak, and the moisture leaked out before the kernal could explode.

It comes from corn specifically selected for popping. The orignal popping corn, an indian corn, was cross-bred to produce today's hybrid corn for popcorn. Over the years, they have continued to refine it. Moisture content is what determines how well it pops for the specific need (i.e. stove top/popcorn maker or microwave).

For instance, Jolly Time is now very much like Orville Redenbacher as far as size and texture, so much so that in blind-taste tests (which occur when the pantry light is out), I will select either. Clearly, you can tell the difference between Redenbacher and every other producer - virtually every kernel pops.

Every Christmas I get the usual useless stuff catalogs. One of them always has the popcorn on the cob. For an obscenely high price you get the fun of putting a corncob in the microwave and getting popcorn (it pops right off the cob)

It is a special corn that is grown just for popcorn. It is just left to dry out.

The corn is a hybrid, not your typical grocery store type corn. It's dried so that it has about 12 to 14 percent water in it. When you cook it the water in the corn boils and explodes and what you have left is fluffy goodness!

popcorn is made when tiny water particals inside the kernal are heated up until they explode completely turning the kernal inside out... that is why/how popcorn is made

Yes, corn. It has a small droplet of water inside the kernel that expands into steam when heated. This is why it pops.
