Mix this up in a big bowl: lean ground beef, bread crumbs, oregano, thyme, salt, pepper, an egg, sauteed onions and garlic, and hot pepper flakes (if you like). Find the right ratio of bread crumbs to egg to make it a nice workable consistency (where it just holds its shape - I usually just use 1 egg per pound of meat).

Roll 1 to 1 1/2 inch balls and place on a foil-lined baking sheet (for easy cleanup) that you already sprayed with cooking spray.

Bake at 350 for 30 - 45 minutes, or until crispy (but not burned, like you said).

I do this every time. I never stew them because I don't want all that fat in my sauce - I want it to cook off onto the baking sheet in the oven.

I've found that baking meatballs at 350 degrees for about 20 to 25 minutes not only browns them and cooks them evenly, but keeps them moist, as well. Test one by cutting it open after about 20 minutes and see if it's ready or if it needs more time.

Are you familiar with the trick of patting the meat out into a square about an inch thich and then cutting it into equal sized squares? Each square can be rolled into shape easily and the resulting meatballs are uniform in size. That will insure that they all get done about the same time in the oven.

This is my recipe for meatballs for my spaghetti recipe.

Meatballs

1 egg
1 lb hamburger meat
Bread 2 pieces (tear into small pieces)
Garlic salt

Make balls (about 1" each), Add all together in a bowl and mix thoroughly, then cook in pan till brown and add to sauce. Heat in sauce for 3-4 hours.

I like to bake mine on cookie cooling rack inside a cookie sheet. That way they brown on all side and the grease drips to the bottom of the pan. This is also how I cook my bacon. no muss no fuss. Bake at 350 for bacon turn after about 10 minutes.

I've actually done both and both ways are good. Baking them allows them to brown while cooking, which lends a different texture to them. Cooking them in the sauce allows them to absorb the sauce and enhances the flavor. What I do most frequently is to brown them in a skillet, pour some of the sauce in the skillet, cover and put on lower heat to simmer. Then I transfer them to the sauce itself. If you are not making spaghetti sauce, then I recommend baking them.

I cook mine in the oven on a silicone baking sheet for about 15 minutes at 350, I turn them over so they don't get crusty on one side...

Ah, one of my favorite things to make they are so fun! What I do is brown them on the stove top for about 10 minutes , then bake them in the oven the rest of the way. (about 15-20 min. depending on how big they are).

I like to cook them in the oven. They get nice and brown on all sides, and you don't have to worry about them breaking up in the pan.
