super glue would be the easiest and cheapest way to glue coffee beans on canvas. I would wear plastic gloves so your hands don't get glued together!

Gesso. It is the primer you use to prepare the canvas. It is actually glue with chalk (theoretically) Your beans will stick perfectly to the surface. Just pressing them in wet paint should also hold them in place.
Be sure the coffee beans are dry and NOT fresh. Leave them out to dry for a few days or they will shrink and pop off the canvas anyway.

the best glue to use would be epoxy. it will hold anything together. It's a two part glue (you mix it together) and is very strong. You can purchase it at walmart or other hardware stores.
Another option might be gorilla glue--but I'm not sure that it is clear.

HI,I WOULD THINK A HOT GLUE GUN WOULD WORK WELL.ALSO ALEENES TACKY GLUE.YOU CAN PURCHASE IT AT ANY CRAFT STORE AND WALMART IN THE CRAFT SECTION.IT IS IN A GOLD LOOKING BOTTLE.LET IT DRY OVERNIGHT.HOT GLUE DRIES INSTANLY ONCE COOL.GOOD LUCK!
