My particular interests are with the environment. I was looking at a forestry program with the Peace Corps, but I can't do the volunteer thing with my baby. What else is out there along those lines, and what kind of major should I go after? Currently pursuing environmental science, but thinking of switching to botany.

Just in case someone else is interested, if you want to be an environmental volunteer with the Peace Corps, things like gardening on your own help improve your chances. Experiences outside of school are considered.

Because you can't volunteer with the Peace Corps at this time, you may consider something nationally such as Greenpeace or the EPA.

Your major will depend on what you want to do. Do you want to educate on how to grow or raise awareness etc? If you are not sure of what you want to specialize in but know that you want to work with the environment, a major in environmental science will probably be more beneficial than one in botany because the ES degree is more broad and will give you more options as far as future career paths.
I recommend looking at different environmental careers. Once you find a job or volunteer opportunity that interest you, look up vacancies for that position and see what is required of the applicants.

It doesn't matter. Peace Corps only wants your commitment and enthusiasm.

Maybe Sociology, or Social Work. Take a look at those, maybe.
