Outback Steakhouse Aussie Fries Copycat:

Aussie Fries
1 (2 lb) bag frozen french fries
1 cup colby-monterey jack cheese, shredded
6 pieces bacon, cooked
24 fluid ounces peanut oil (Can be reused later, store in refrigerator)
Dipping Sauce
1/2 cup sour cream
1 tablespoon prepared horseradish
1 dash cayenne pepper
1 dash salt
1 dash black pepper
1. Divide the fries into half, and use the other half later. Heat oil to 350 degrees. If you do not have a thermostat, make sure the oil is hot enough, so that when you set a French fry in there it will cook immediately. If the french fry sinks to the bottom, and barely bubbles, it is not hot enough. Fry the potatoes in small batches, they are done when they are golden brown, and float to the top of the skillet. I like to use a Dutch Oven). Be sure to drain the potatoes on paper towels. You can keep them warm in the oven while the other fries are done.
2. When all French fries are done cooking, and drained place them onto a platter. Salt the french fries if you like, and sprinkle on cheese and cooked bacon. Pop these back into a warm oven until the cheese begins to melt.

Here's a lower fat alternative for cheese fries:
1 bag Ore-Ida cut dinner fries
1 16 oz container low fat Velveeta Cheese
Salt and Pepper
Cooking Spray
Preheat oven to 425 degrees and spray a cookie sheet. Spread your fries on the baking dish and sprinkle with salt and pepper. Bake for 15 minutes and turn over. Bake an additional 5 minutes and remove from oven. Top with sliced Velveeta and return to oven until cheese melts. Serve with your favorite dipping sauce!

You cut fresh potato in the long wedges or buy the frozen steak fries. Cook the potatoes. Then you buy Cambell's cheese soup, or nacho for more zip, warm it up in the microwave (you may need a touch of milk to make it the consistency you want)
Lightly pour/spoon the cheese over the fries and serve extra on the side.
It works for any French fry type.

Not sure about Outback, but Ed Debevic's had what they called "Atomic French Fries".
Fries with melted cheese and home made salsa.

All you do is make fries, and then put cheese on top of them.
Actually, don't make cheese fries if you don't want to eventually get nasty cholesterol and weight problems.
Just go to Outback and give those greedy people more money.
