I need to record from 2 or 3 (whatever is going to be easiest and best) video cameras simultaneously and get the recordings into one video file which eventually is digital. What is the best way to do this and keep relatively high quality? Advice on any products including cameras would be much appreciated.

Easy to do with modern editors - they don't care which camera was used. MiniDV gives the best quality and ease of editing. Make sure you've got something to synch to, such as a hand clap or a camera flash. I'd start by putting the footage from each camera on its own track on the timeline, synching them and then cutting out the unwanted bits.

the best or professional way is to feed the live cameras into a device called a quad split. the least expensive way to do this is to get a splitter that is intended for use with surveilence cameras. the cameras are sync'ed and combined and the output can either go to a video monitor or VCR. The best is 4 images as they fit perfect on a screen, higher splits reduce the resolution severely.

Transfer the video to your PC/Mac and do it with software - it's actually fairly simple.... especially if you have a TV tuner or another means to directly connect the camcorders to your computer. You can download both videos and then merge/cut them with software.

I would just buy 2 digital cameras and put both files on your computer and then get a program, like "my sonic dvd" or roxio media center and put them together (they allow you to edit them).

You need cameras that can handle timecode and corresponding video editors that support synchronization of timecode.
