Does anyone know of any good non-red or creamy sauce for pasta and chicken?

Well, tomato-based sauces and cream-based sauces are really your two major varieties. If you don't like either of these, then try a scampi-style sauce, which consists of an oil and an acid. Olive oil and lemon juice is the most common combination, and it would taste great with chicken - you want to keep your oil-to-acid ratio at about 3 to 1, so it won't be too tart or too greasy. You can also add any other flavors you like to this basic vinaigrette (garlic is yummy!) White wine also works well in place of the lemon juice.

Try 1 cup of good olive oil, 1/3 cup of lemon juice, 2 minced garlic cloves and a tablespoon of basil. Cracked pepper and salt to taste and it should be very yummy.

Another option might be a pesto, which is really just ground-up basil held together with a little olive oil and some lemon juice (traditional). You want the consistency to be thick but still workable, and you MUST use fresh herbs. If basil is a little strong for you, use parsley instead.

Put a couple good handfuls of herbs (basil or parsley) into your food processor, drop in two cloves of garlic and juice a lemon into it. Put the lid on and pulse the processor while DRIZZLING the oil in from the top - this is important, because if you pour too fast it will not hold together. You'll probably use about a 1/2 cup of oil. Let the processor run for a few seconds until you like the consistency. Toss with pasta and enjoy.

I'm a big believer in white wine and dijon mustard added to chicken broth and reduced. Toss in some capers or artichoke hearts, salt, and fresh ground pepper and you have a winner every time!

You can make a delicious pesto sauce! And not just basil pesto... you can use sun dried tomatoes, spinach, eggplant... LOTS of different things! Enjoy...

yeah well you could always marinade boneless skinless chicken breasts in some italian salad dressing for a few hous. then grill them. or you could make some kind of breaded chicken breast with italian bread crumbs and put them in the oven (350 degrees for about 30-40 min).
