Bake chicken seasoned with some Garlic, Sage, Rosemary.

Cut potatoes into ~ 1" uneven pieces (The amount of potatoes varies depending on the number of people, just remember the old saying "one for each person and one for the pot")
Chopped onion
Heat oil in a pan and put in the potatoes and onions
Season with Garlic, Cayenne, salt, pepper and thyme.

Serve with asparagus and a spinach salad.

Lipton makes a really good soup/recipe packet... Savory Herb and Garlic. You slice potatoes and carrots and add water and a little bit of olive oil along with the mix and chicken. It only takes 40 minutes to cook and the potatoes and carrots get a nice carmelization on the bottom of them which brings out the sweetness in the vegetables. I use boneless chicken, so I throw in the veggies for 20 minutes, then add the chicken for the last 20. I just made this last night for dinner. The recipe is on the package inside the box of the Lipton mix.

1. 1 Rotisserie chicken
2. 6 - 8 Yukon Gold Potatoes
3. 1 carton Organic Chicken Broth
4. 1/2 cup sour cream
5. 1/2 cube butter
6. 1/4 tsp garlic powder
7. 1 tsp kosher salt
8. 1/2 tsp fresh, coarse ground pepper

Cook the potatos in chicken broth until tender and drain. Add sour cream butter, salt, pepper, and garlic powder. Mash and add seasonings to taste. Serve the potatoes with the chicken (cut into quarters) along with glazed carrots and a spinach salad. Yum!

Garlic Chicken and Potatoes:

2½ hours 20 min prep
4-6 servings

1 roasting chicken
8 potatoes, cut in half
1 large garlic head
paprika
sea salt
pepper
water

1. put small amount of water in bottom of roasting pan.
2. Cut potatoes in half & put in pan and sprinkle paprika, salt & pepper to taste.
3. Peel the garlic cloves and scatter them all over the potatoes.
4. put chicken that has been seasoned with salt & pepper & paprika on top of potatoes.
5. cook in oven on 350 for about 1 1/2 to 2 hours basting every so often.

this my favorite one
you need
2 pounds chicken, ( any parts you like )
1 1/2 pounds new potatoes, cut in quarters, ( Or any shape you wish )
1 can diced tomatoes with chili, ( chili is optional )
1 cup heavy cream, ( or substitute low fat )
1 onion, sliced
1 cup chicken Broth
1 tsp. oregano
3 cloves garlic, sliced
3 tbs. oil
in a large roasting pot add oil and season chicken and brown,
add onion and tomatoes, add potatoes, and broth, season, simmer 5 min. than pop in oven 300 ° d. for 30 min. remove add heavy cream and garlic re season again to your taste, simmer 10 min. serve with rice or other side dish of your likes. enjoy

Start with a stir fry, baked dinner or grilled chicken and potato bake as a side dish.

I like to bake potatoes, pumpkin and carrots, then add to stir-fried chicken pieces and coat with a gravy sauce.
