I was and from a source (I'll never tell!)usually so reliable that it surprised me

The directions were to beat the finished cake (after the flour is added, that is), a genoise (made with beurre noisette ~slurp!) 100 strokes. As I was reading, I kept thinking, "No, no .... 100 strokes is for hair, not cake batters!"

You know what I did? I went right ahead, deciding they knew better than I .... but you know what? They didn't! (sniff, sniff!)



Now, please tell me yours!!!

When reading a recipe, I usually don't pay much attention to the method because I already know it and for the reason you stated.

I found a recipe for Banana cookies from another relatively reliable source, and ended up changing the recipe.

It called for 2 cups of flour, so I made it that way, thinking the dough wasn't nearly stiff enough. I had to use two spoons to form the balls. The first tray came out edible, but the texture wasn't great. I ended up adding a full cup of flour to the rest of the dough and the rest of the cookies came out great.
I've been baking long enough, I feel confident messing with things if it doesn't seem right, but like you said, you think they know what they're talking about, right!?

Too many times to count! Occasionally I'll make something new and follow the directions (I always do the first time) and it turns out horrid to both my hubby and I. I say "But I followed the directions!"

Then we have to rethink where it went wrong so it turns out better the next time. I think the last time was some sauce I tried to make. And my cookies never turn out right because of directions. I make the batter, and I let him plop them on a pan and bake. Why I can't do that, I don't know!

I'm pretty good at following recipes but this just reminds me of a bloke I had lodging with me. Once a week he had to cook dinner and I would leave him an easy recipe card to follow.
I came home from work and...no dinner.
I found him in the pub and asked why he hadn't cooked me any food. His answer ???
The recipe used seasoned flour and he could only find plain and self-raising in my kitchen!!!
We still chuckle over this 26 years later.

i was cooking a beef roast and the recipe i had said 20 min for every pound. it was a 3 pound roast and it ended up taking 2 and a half hrs. man were we hungry

sometimes when i am reading a recipe and the instructions make no sense and you think to yourself, whoever's job it is to proof read these before they get published should be fired.
