I'm getting ready to make homemade chicken noodle soup (for the first time) for my sick daughter. I'm wondering what herbs go well in chicken noodle soup? Thanks much!

I just use a little garlic, parsley, salt and pepper when I do mine. Although, since your daughter is sick, you might leave the salt out of hers, to not dehydrate her. Hope she gets better and loves the soup!

I would say that the chicken powder is mixed with the water to create broth. So if you have chicken broth I don't think you would need the powder too. Herbs such as oregano, thyme and rosemary would be fabulous in your soup. The only problem with the rosemary though is you'd have to strain it out afterward unless you chopped it up very fine. You could definitely use chicken breasts but I would cut the chicken meat up first and basically boil the meat in the broth. The reason why it is AWESOME to use a whole chicken is because you make the stock from scratch, which provides an incredible flavor to your soup because of the bones. Then the meat falls off the bones so easily and the meat is delicious! If you're going to use chicken breasts, I would suggest boiling it in the broth, since the purpose of boiling the whole chicken in water is to make the stock. It sounds like you kind of want to do it the easy way, which is great for a first try. Therefore, I would just boil everything together (chicken and veggies) because it won't take that long for the chicken to be fully cooked. The only veggie I would suggest is potatoes and you only need to add a couple (diced). Start by cooking the onions over heat in the pot with some olive oil, then add the onions and cook those until they are translucent, then add the garlic and cook for about 1 minute. Then add the celery and carrots and cook everything together for about 10 minutes. Then add the broth. Bring to a boil and if you're going to use potatoes I would add those first and let them cook for a bit until they get a bit tender. Then I would add the rest of your ingredients, cook the chicken all the way through and then you're done!! Next time try and use the whole chicken... you will not be disappointed! Keep it simple

If you have a chicken carcass (what left of the roast chicken after you've carved it) then put it in a pot and cover with chicken stock. Add celery, carrots, peppercorns, and two bay leaves. Let it simmer for a few hours.

run the soup through a strainer (make sure you keep the stock!). Pull the good meat off the bones and discard the icky parts. Put the good meat back in the pot with the stock and add new carrots. Let that simmer for about half an hour then add your noodles.

Boil your chicken breasts on the bone in your chicken broth. While the chicken is boiling, you can prepare your vegetables. All your veggie choices sound great for a good, hearty chicken soup! Cut all your veggies into bite sized pieces, aside from the garlic and onions. Finely chop your garlic, and dice up your onions. Saute them in a pan with a little butter or olive oil until the onion is translucent. Once your chicken is fully cooked, remove it from the pot and set it aside to cool, then dump all your veggies, including your onion garlic mixture, into the pot of broth. Keep this on boiling. Now... I would recommend you cook your pasta separately or you may end up with a rather starchy soup. Pasta puts off a lot of starch when you boil it. I typically boil mine till it is ALMOST done, drain it, then add it to my soup and let it finish off there. Once your carrots start to get soft, you can add your mostly cooked pasta to the pot. Once your chicken has cooled off enough to touch, pick the meat from the bones. And when your pasta is fully cooked, add in your chicken, along with a little pepper, thyme, and some basil. Never add salt to a soup that is made with premade broth. The broth already has a lot of salt in it. Enjoy!

I use chicken breasts for my soup & I add a few celery ribs, a small quartered onion, 2 or 3 bay leaves, a little fresh garlic, 1/4 tsp. of whole black peppercorns, and a couple of carrots to the stewing water. Strain the broth (make sure you get rid of those peppercorns - they like to hide) and add your noodles & diced or shredded chicken. It's the first thing my daughters ask for when they feel bad.

"Home style chicken noodle soup that really makes a wonderful side or meal, it cures what ails you. If you like lots of noodles use a whole pound of them. Serve hot with your favorite salad and bread. This freezes or doubles well."

Original recipe yield:
12 serving

INGREDIENTS
1 gallon water
1 (4 pound) whole chicken, cut into pieces
1 large onion, peeled and halved
3 bay leaves
10 whole black peppercorns
2/3 bunch celery, leaves reserved
1 pound carrots
3 tablespoons chopped lemon grass (optional)

1/4 cup chicken soup base
1 pound carrots, peeled and sliced
1/3 bunch celery, chopped and leaves reserved
1 (8 ounce) package dry egg noodles
DIRECTIONS
Place chicken and water In a large pot over High heat and bring to a boil. Reduce heat, cover and simmer, skimming fat as needed, 30 minutes.
Place whole, peeled onion, bay leaves, peppercorns, whole celery, whole carrots and lemon grass in the pot and simmer, covered 1 hour.
Strain broth and reserve chicken. When chicken is cool enough to handle, remove skin and cut meat into bite-size pieces.
Return strained stock to pot over high heat, and stir in chicken base, chopped celery and chopped carrots. Bring to a boil, then reduce heat, cover and simmer 20 minutes, or until carrots are tender.
Chop celery leaves and stir into pot with the noodles. Simmer until noodles are cooked, about 10 minutes more. Stir in chicken and heat through.
