I used to mess up my gritz. Then my daddy taught me trick to creamy grits. If use one cup grits double water.ecamle one cup grits two cups water. Two cups grits four cups water. Wash grits put in pot run water over it make surs no bad spits. Do that three times. Then add water. Put in spoon of salt. Out on slow heat stirring occasionally. You have best cresmest grits . let grits cook for twenty minutes. Make sure Jim Dan NY grits. NY grits come out so good and creamy my husband wants eat my Grits. Iam not talking about jimmy danny grits.

Easy, Creamy Cheese Grits:

25 min 5 min prep
6 cups

3 (10 1/2 ounce) cans chicken broth (fat-free preferred)
1/2 cup whipping cream
1 cup uncooked quick-cooking grits
2 cups shredded sharp cheddar cheese

1. In a large saucepan, combine the chicken broth and whipping cream.
2. Bring to a boil.
3. Add the grits, and return to boiling.
4. Reduce heat, cover, and simmer 5-7 minutes.
5. Add the cheese, stirring until melted.
6. Allow to sit for about 10 minutes.
7. Serve.

Grits can be a little tricky. If you're looking for smooth, add a little more liquid while you're cooking them and keep the flame low. For creamier grits, you might want to mix milk with the water. I do this and I usually have pretty good results.

Cook the grits in milk instead of water. Or you can use half milk-half buttermilk. And stir, stir, stir! Bring milk to boil then slowly add grits!

After boiling the water and salt. Turn down the heat to low and stir in grits. Then stir in buttermilk and continue to stir slowly (periodically) until done . Stirring keeps the lumps from forming and buttermilk makes everything creamier. Goodluck .

I add the boiling water really slowly to the grits, whisking contstantly. Whisk whisk whisk. It's like making gravy, don't believe any recipe that says "Add the liquid all at once." No no no, that's where lumps come from.

As you add water, constantly stir - a whisk is helpful as well. Add your butter or cheese or whatever at the end of cooking and whisk in.

i usually mix mine alot and also add more water.
