The Bible doesn't say specifically but it could be because David knew that there were four other giants with the Philistines.
2 Samuel 21:15 There was war again between the Philistines and Israel, and David went down together with his servants, and they fought against the Philistines. And David grew weary. 16 And Ishbi-benob, one of the descendants of the giants, whose spear weighed three hundred shekels of bronze, and who was armed with a new sword, thought to kill David. 17 But Abishai the son of Zeruiah came to his aid and attacked the Philistine and killed him. Then David's men swore to him, "You shall no longer go out with us to battle, lest you quench the lamp of Israel." 18 After this there was again war with the Philistines at Gob. Then Sibbecai the Hushathite struck down Saph, who was one of the descendants of the giants. 19 And there was again war with the Philistines at Gob, and Elhanan the son of Jaare-oregim, the Bethlehemite, struck down the brother of Goliath the Gittite, the shaft of whose spear was like a weaver's beam. 20 And there was again war at Gath, where there was a man of great stature, who had six fingers on each hand, and six toes on each foot, twenty-four in number, and he also was descended from the giants. 21 And when he taunted Israel, Jonathan the son of Shimei, David's brother, struck him down. 22 These four were descended from the giants in Gath, and they fell by the hand of David and by the hand of his servants.

David had no doubt he would slay Goliath with the first stone.
As you read further into 1st Samuel,( or is it second samuel) you discover that Goliath had four sons.
I think he picked up 5 stones to make sure he was prepared should Goliath's sons take up the battle.
At least that is how I read it.
Good question, I wondered that myself for a long time, and then I came to this conclusion.

because Goliath had 4 brothers. I believe he was to kill them all that day, but didn't. If you read further into the bible you'll find out that when David was old these 4 giants came back. Giants (problems) not dealt with today will come back to haunt you later on.

The 5 stones represent the 5 fold ministry of the church. When the church operates in the 5 fold ministry, we can slay giants, just like David did.

Stones = Laws; Which things are an "allegory": Gal 4.
Davidic Five Stones = Five Mosaic books of Laws: Law.
Daniel had "night visions" (night mares) from reading it.
He that is without sin, let him cast the first stone(law).

well, i had never thought about that. i had always assumed when i read that account that David just wanted to have extras in case one wouldn't get the job done. but thanks cuz thats a cool explanation.
