Because Bamboo is not an indigenous plant to our lands. With modern technology, we build our houses from concrete and stone and bricks. We could, if we wanted to, import or grow large amounts of bamboo to use as a building material, but given the durability of current modern materials, this wouldn't be a good idea for permanent housing.
In days gone by, houses were made out of wood and straw and clays and mud. In those days bamboo was completely alien, so we just used the local wood which was primarily oak, willow etc.
Bamboo is sometimes used to build aesthetic 'buildings' like gazebos, were durability is less of an issue and their smaller size means it is easy to import/home grow the materials.

1. Bambo is not in abundance here.
2. We have lots of rock and clay to produce building materials.
3. Bamboo isn't exactly used for permanent structures.

bamboo used in Asia as scaffolding, not sure of entire structures. planning regs in the UK very anti to unique or new processes. doubt permission be given for this material.

Probably because it isn't exactly abundant in Britain and the costs of shipping it over from its indigenous lands would be more expensive than using more conventions materials which can be bought in this country.
So like most things, it boils down to money.
