I'd rule economics out in a second. I'm not really into economics but if you are, then go for it. As for the religion class it sounds interesting and the guitar sounds cool. If you're really stressed out right now I think the guitar might be a nice choice to ease off a bit.

fortunately I was able to study all of those classes in My High School. Economics is hard, but VERY Interesting and you will learn SO much. You have to be good at maths a little bit and figure out charts and graphs...
Beginning Guitar! It's always fun learning guitar!
Religion. I was able to study about all Religions and felt it was very beneficial to me....It is good to be able to know about all of them and what they all mean and practice...
Hmmm...Out of all of them, I'd say Religion. It is a massive world out there and we need to keep an open mind to all people and their beliefs, what's a better way than becoming educated and learning about them all?!

The decision is yours but religion and spiritual studies is advisable from guitar anyway guitar is an instant knowledge.

If you are a Christian take the Guitar class you never know what God has planned for you.

I'm not religious, but I took comparative religion for a term in high school and it was actually pretty cool.

Guitar would just be fun

Lazy is always a good choice. Otherwise, which do you want to take? Pick one and go. If you have to have them all for your syllabus, it doesn't really matter, if not, it doesn't matter either. Pick.
