This is quick and easy. A family favorite.

Saturday Chicken
5 servings

10 chicken thighs (or whatever you prefer)
1 can condensed cream of mushroom (or cream of chicken)
1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)
salt, garlic powder, and paprika- to taste
chopped parsley

Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.
Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.
Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.


(Kids two favorite things hotdogs and macaroni and cheese)

Polka Dotted Macaroni and Cheese
Heat oven to 375'
Cook as directed on package..... 1 pkg (6-8oz) macaroni
Drain the macaroni and pour into ungreased baking dish.
Stir into macaroni.... 1 can (10 3/4oz) condensed Cheddar cheese soup,
1/2 c. milk,
1 tsp Worcestershire sauce
Cut crosswise into very thin slices..... 2 hotdogs (i have used more)
Arrange hotdogs on top of macaroni mixture.
Bake uncovered 25 minutes or until hot and bubbly.
4-6 servings

or Pizza with a hamburger crust
(This was the only way i could get my kids to eat kidney beans)

Heat oven to 425'
Mix with spoon in large bowl..... 1 pound hamburger
1/2 c. dry bread crumbs
1 tsp. salt
1/2 tsp oregano
Stir in...... 1/2 c. tomato sauce (i use 1c. if you like
it saucier)
Spread meat mixture in ungreased 10" pizza pan
or on the bottom and side of 10" pie pan.
I have used a rectangle pan.

Pour on top...... 1/2 c. tomato sauce (or more)
Spread on tomato sauce......1 can (8oz) kidney beans, drained
Sprinkle 4oz. Cheddar or mozzarella cheese on top. (i have used both)
Bake uncovered 20 minutes.

Super easy recipe: Hot beef dip sandwiches.

Ingredients:

Chuck roast
1 can beef broth
1 can french onion soup
deli buns

Put the roast and the broth and soup in a crock pot. Let it cook ALL day. The roast will be very tender. Pile up a bunch on a bun. Use the liquid in the crock pot for the au jus to dip in. Very easy and yummy! Enjoy!

Prep time: about 15 minutes

Ingredients:

1 standard-sized bagel, cut in half

tomato sauce

shredded mozzarella cheese

toppings like diced green pepper, chopped onion, or chopped tomato (whatever you like)

seasonings like oregano, basil, and pepper

Directions:

Set the oven to low heat.
Spread tomato sauce on each bagel half.
Sprinkle the shredded cheese all over the tomato sauce on each half.
Add your favorite toppings.
Put a light sprinkling of seasonings on each half.
Put your bagel halves on a baking sheet.
Bake in the oven on low heat for about 5 to 8 minutes. You'll know they're done when the cheese is bubbly.
Let cool for a minute, then enjoy your tiny pizzas!
Serves: 1

Serving size: 2 tiny pizzas

How about grilled cheese and soup.

Baked chicken with a vegetable and potato.

Scrambled eggs with toast and orange juice

Omlet with toast and orange juice

Peanut butter and jelly with a piece of fruit and some cookies.

Cereal and milk


I included some breakfast and lunch meals too.

Veggie mushroom burger
Serves 1
Preparation time less than 30 mins

Cooking time less than 10 mins
Ingredients
1 large flat mushroom
1 bap
For the filling:
a handful lettuce, shredded
1 tomato, sliced
1 mushroom, sliced



Method
1. Lightly brush a large flat mushroom with oil and grill or barbecue for 3 minutes. Turn over and grill for a further 2 minutes.
2. Spread some mustard over one half of a bap.
3. Fill with shredded lettuce, sliced tomato and mushroom.
4. Top with remaining half bap.



Aubergine and tofu satay
Serves 4
Preparation time less than 30 mins

Cooking time 10 to 30 mins

Ingredients
For the green curry paste:
1 shallot, finely chopped
1 stalk lemon grass, chopped
2 small red chillies, chopped
2 cloves garlic, crushed
2.5cm/1 inch piece fresh root ginger, peeled and grated
1 lime zest only
1 tbsp fresh coriander leaves and stalks, chopped

For the skewers:
1 packet firm, regular tofu, drained and pressed
1 aubergine
2 tbsp groundnut oil
12 short wooden skewers

For the satay sauce:
2 tbsp groundnut oil
1 shallot, finely chopped
2 cloves garlic, finely chopped
2 large red chillies, deseeded and chopped
1 tsp ground cumin
1 tsp ground coriander
75g/3oz crunchy peanut butter
200g/7 fl oz coconut milk
1 lime, juice only
salt to taste



Method
1. To make the green curry paste, grind all the ingredients together in a pestle and mortar until you have a paste. Store in the refrigerator in a screw top jar for up to 2 weeks.
2. For the skewers, mix 3 tbsp green curry paste together with 1 tbsp groundnut oil. Cut the tofu and aubergine into 1.25cm/1/2 inch cubes and thread onto twelve short wooden skewers. Lay flat on a plate and pour over the paste mixture to
coat well, rubbing the aubergine and tofu all over. Leave for 30 minutes minimum (or overnight), covered in the fridge to marinade.
3. Brush the vegetables with a the remaining oil and grill under a medium heat until golden.
4. To make the satay sauce, heat the oil in a small saucepan and fry the shallot, garlic, chillies and spices for about 5 minutes until tender. Mix the peanut butter with a little warm water to make a thinner paste and add to the pan, together with the coconut milk. Bring to the boil, then simmer until the sauce thickens. Season with lime juice and salt to taste. Divide between 4 small bowls.
5. Serve the skewers on individual plates with a small bowl of satay sauce.



Carrot and orange soup
Serves 4-6
Preparation time less than 30 mins

Cooking time 30 mins to 1 hour

Ingredients
2 tbsp oil
1 medium onion, peeled and chopped
900g/2lb carrots, scrubbed and chopped
1l/1¾pt light vegetable stock
2.5g/½ tsp nutmeg
2.5g/½ tsp paprika
15-30g/1-2 tbsp fresh coriander, finely chopped
rind and juice of 1 large orange
salt and freshly ground black pepper

For the garnish:
extra coriander leaves
orange slices



Method
1. Heat the oil in a pan, add the onions, then cover the pan and sweat them for 2 - 3 minutes.
2. Peel and chop the carrots finely and add these to the pan. Cover again and sweat the vegetables for a further 10 minutes.
3. Next add the stock, spices, coriander and the rind and juice of an orange. Bring to the boil and simmer for 40 minutes.
4. Let the soup cool, then liquidise it thoroughly, making sure it is completely smooth. Season it well with salt and freshly ground black pepper, then return the soup to a clean pan and re-heat it gently.
5. You can serve this soup garnished with extra coriander or thin slices of orange.



Roasted baby onions with savoy cabbage
Serves 1
Preparation time less than 30 mins

Cooking time 10 to 30 mins
Ingredients
For the roasted baby onions
4 baby onions, peeled
200ml/7fl oz hot water
3 slices pancetta, cubed
2 tbsp vegetable oil
2 tbsp caster sugar
25g/1oz butter
For the savoy cabbage
50ml/2fl oz water
25g/1oz butter
2 slices pancetta, cubed
½ savoy cabbage, thickly sliced



Method
1. For the baby onions, place the peeled onions in a pan of hot, but not boiling, water. Poach for six minutes, or until soft.
2. In a frying pan, dry fry the cubed pancetta until golden.
3. Add the oil and baby onions and cook until the onions are golden.
4. Add the caster sugar and butter and cook for a further two minutes.
5. For the savoy cabbage, place the water, butter, pancetta and cabbage in a sauce pan, bring to the boil and cook for eight minutes.
6. To serve place the braised cabbage in a bowl and top with the roasted onions.

How about meatloaf and green beans and corn? That sounds really good to me...might have to fix it tomorrow night. Good luck!

Beef Stroganoff Casserole
1lb. hamburger (or ground turkey works as well)
1 pkg. egg noodles or other noodle
1 can sliced mushrooms, drained
1/2 onion, minced
1/2 tsp. minced garlic (about 1 clove)
1 cube beef boullion
1/3 cup water
1 can cream of mushroom soup
1 1/2 tsp. Worcestershire sauce
1 cup sour cream
1 cup shredded swiss cheese

In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.


Meatloaf
2 lbs hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato sauce

Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute

In bowl, combine beef, onion, garlic, eggs, tomato sauce and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.


Mom's Stuffed Peppers
2 lbs. Hamburger
1 onion, chopped
1 1/2 cups rice
2 eggs
4-6 medium sized bell peppers
1 large can tomato juice

Combine hamburger, onion, rice and eggs in a large bowl. Remove tops and insides from the peppers. Stuff peppers with hamburger mixture. Place in baking dish and pour tomato juice over them. Bake at 350 degrees for 1 ½ hours.



Mom's American Goulash
1 lb. Hamburger
2 small cans tomato sauce
1 can diced tomatoes with juice
1 lb. Large elbow macaroni
2 tbsp. Butter
Salt and Pepper to taste

Brown hamburger until no longer pink, drain any grease. Prepare macaroni according to package directions. Combine hamburger and macaroni in a large bowl or pot, add sauce, tomatoes with juice and butter. Allow to sit 15 minutes on warm so that macaroni absorbs some of the sauce. Add salt and pepper to taste.

Bubble Pizza
2 tubes biscuits
1 lb hamburger, browned
2 cup shredded cheese, can use 1c moz and 1c cheddar
1 jar pizza sauce
Preferred pizza toppings

cut biscuits into quarters and place in a 9x13 baking pan, stir in all other ingredients and bake according to biscuit tube directions


Un-Fried Chicken
6 skinless, boneless chicken breasts
2 cups sour cream
2 cups crushed cornflakes cereal
1 teaspoon Italian-style seasoning
6 tablespoons butter, melted

Preheat oven to 350 degrees F (175 degrees C).
Rinse and trim the chicken breasts of any fat or skin. Pat dry. Generously coat both sides of each breast with sour cream. Put crushed cornflake crumbs in a shallow plate or bowl and season to taste (I use onion salt and garlic salt). Dip the sour cream coated chicken in the seasoned cornflake crumbs. Place coated chicken in a lightly greased 9x13 inch baking dish. Drizzle with melted butter/margarine and bake in the preheated oven for 1 hour.


EASY BEEF ENCHILADAS
1 Lb. ground beef
1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos &
Fajitas

Heat oven to 375*F. Brown ground beef over medium-high heat
until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce
and 1 cup cheese. Spoon enchilada filling onto tortillas;
roll-up and place seam-side down in lightly greased 13 x 9 x
2-inch baking dish. Pour remaining enchilada sauce over top;
sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to
20 minutes. Makes 12 Enchiladas


RIGATONI AND HAM BAKE
3 c. rigatoni
2 c. diced cooked ham
1 c. shredded Cheddar cheese
1 jar 4 cheese alfredo sauce
1/2 cup milk
1/2 c. crushed ritz crackers
butter

Heat oven to 350 degrees. Boil water (2 quart) in a large deep pot with 2 teaspoons salt and 1 tablespoon oil (to prevent boiling over). Add rigatoni noodles, stir to separate. Cook uncovered until water comes to a full rolling boil for 10-11 minutes, stir occasionally. Drain and rinse under hot water. In a large bowl, combine cooked rigatoni, ham and 1 cup cheese. In a medium saucepan, mix milk with alfredo sauce. Combine sauce with rigatoni mixture. Turn into 2 quart casserole. Sprinkle with ritz crackers and dot with butter. Bake at 350 degrees for 25-30 minutes.
