It's hard to keep long-grain rice in the fridge, shorter grain rices work better.

Depending on how much you have left over... don't put it in a plastic container without lining it with plastic wrap first. Line the bottom of the container put your rice in, sprinkle a bit of water on it and then put the plastic wrap over it tightly - leaving NO AIR, in-between where the top of the rice meets the container lid (this is why it dries out and gets hard). By pulling up the plastic wrap and twisting it tightly before the lid goes on, helps retain the moisture.

When I have leftover rice, I put one cup measures in a quart size storage bag, squeeze out the excess air. Then during the week when I want a quick lunch I reheat it in the microwave and have it with some vegetables. It doesn't seem to dry up that way.
