Scallops with Garlic
INGREDIENTS:
1 1/2 pounds bay scallops
1/2 cup all-purpose flour
3 to 4 tablespoons olive oil
2 garlic cloves, minced
salt and pepper to taste
lemon wedges
sprigs of parsley for garnish, optional
PREPARATION:
Wash scallops and pat dry. Put flour in a shallow bowl; roll scallops in flour.Heat olive oil over medium low heat; add scallops and cook for 3 to 4 minutes, stirring occasionally. Halfway through cooking, stir in minced garlic.
Stir in parsley and serve with lemon wedges. Garnish with parsley if desired. Serve with pasta or rice.
Serves 4.

That's funny...the first two recipes are exactly the same..hmm..
Anyhoo...I love bay scallops with pasta! I just saute up some olive oil, butter and garlic, toss in some veggies if you'd like-sliced bell peppers, mushrooms, chopped asparagus, chopped broccoli, chopped spinach, etc. Cook until veggies have softened somewhat and throw in your scallops. The scallops will release some of their juice as they cook - it won't take long for them to cook, usually just a couple of minutes. Throw it all onto some freshly cooked pasta, top with parmesan and serve!
Or just do the scallops by themselves, or add some shrimp in there...yuuuuummmm.

You can broil them quickly in a garlic butter sauce, or include them in a Chinese stir-fry. They are also good in this recipe.
Garlic Shrimp Casserole
2 cups chicken stock
2 tablespoons cornstarch with 1 tablespoon water
1/2 cup heavy cream
1/2 teaspoon red pepper flakes
1 pint leftover rice
2 pints small shrimp (can sub scallops)
3/4 cup toasted panko bread crumbs (Japanese bread crumbs)
Preheat oven to 350ºF.
In a small saucepan, combine the chicken stock and the cornstarch slurry and bring to a simmer for 3 minutes. Add the cream and the red pepper flakes. In a foil lined terra cotta pot, pour the rice and add the leftover garlic shrimp. Then pour the cream mixture over it. Top with the toasted panko and place in the oven for 45 minutes. Cool a few minutes before serving.

variations: add veggies to sautee mix
Sautee scallops in butter, garlic, dill, thyme,..set aside
Bring cream to boil and add cheese stirring constantly, when thick turn off burner and set aside.
Bring water to boil and drop nests in couple at a time..only takes few min till done scoop out and drain in colander. Place on plate add scallops, then sauce..garnish with dill or parsley or cilantro
Your friends will think you spent forever in kitchen!

try scallop wrapped in bacon.. grill it and serve with cocktail sauce... yummy!
