Vegetable kebabs with gado gado sauce
Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
Kebabs
1 large aubergine
1 red pepper
1 green pepper
2 courgettes
8 mushrooms
4 tomatoes
3 tbsp olive oil
1 tbsp lemon juice
2 tbsp chopped coriander
salt and freshly ground black pepper
Sauce
1 large onion, chopped
2 cloves garlic, crushed
1 red chilli
1 tsp grated ginger
150ml/¼ pint peanut butter
2 tsp honey
1 lemon, juice only
300ml/½ pint water
1 bay leaf
50g/2oz butter
dash tamari or soy sauce
dash cider vinegar
Method
1. For the kebabs, prepare vegetables. Cut aubergine, peppers and courgettes into 2cm/¾in size pieces. Halve mushrooms and tomatoes. Mix olive oil, lemon juice, coriander, salt and pepper and marinade all vegetables with it. Leave to one side.
2. To make the sauce, melt butter, sweat onion and garlic until soft, add all other sauce ingredients and cook on a low heat for 20 minutes stirring occasionally.
3. Whilst the sauce is cooking, put vegetables on skewers (if using wooden ones, soak in water first as this will prevent a fire under the grill!). Place them onto a baking sheet and grill until nicely browned and just cooked, approximately 5-10 minutes.
4. Slide vegetables off skewers onto a plate, pour over a little of the peanut sauce and serve with plain rice. The remaining sauce can be put into a jug and served separately.

Ingredients:
1 12" pizza base (a large Boboli shell is excellent)
1 14-oz. can chopped tomatoes
fresh basil leaves, sliced finely
2 or 3 pieces of prosciutto or Parma ham, sliced very thinly (you can find it at the deli counter)
4 oz. feta cheese, crumbled
1 tbsp. olive oil
Directions:
Preheat oven to 400 degrees Fahrenheit (204 degrees Celsius).
Place the pizza base on a baking sheet and spread it with a layer of tomato.
Sprinkle the basil over the tomato.
Tear the prosciutto or Parma ham into small pieces and lay the pieces over the pizza. Sprinkle the pizza with the feta cheese.
Drizzle the olive oil over the pizza.
Cook in the oven for 12 to 15 minutes or until the cheese browns and bubbles. Cut into 8 slices, share, and enjoy!

Try making seasoned rice. I make mine with minute rice but you can use long cooking rice with this dish.
Make rice
Add 1 1/2 lb of ground beef saulteed
Add 2 cans of diced tomatoes
Season with italian seasoning, lightly season with cayanne pepper, salt, pepper all to you taste.
Turns out great and only need one pan so there is not a big mess to clean up after and you can enjoy you evening.

Fry vegetables that you like in extra virgin olive oil add a little basil and oregano garlic if you like and 1/2 cup of white wine and salt and pepper to taste. Boil pasta mix and enjoy.
Also if you can use a crock pot the best is it can cook all day on low for 8 hours all you need is a crock pot of course and one or two cheap steaks a can of plum tomatoes and one onion salt and pepper put all in crock pot the meat flakes like tuna. Serve over rice or mashed potatoes I call it Swiss Steak it is delicious. Thanks good luck at school.

my favorite is Honey Mustard Mozzarella Chicken INGREDIENTS 4 skinless, boneless chicken breast halves 3/4 cup honey 1/2 cup prepared mustard lemon pepper to taste 4 slices bacon, cut in half 1 cup shredded mozzarella cheese DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Place the chicken breast halves in a baking dish, and drizzle evenly with honey and mustard. Sprinkle with lemon pepper. Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly.

Pizza with a hamburger crust
Heat oven to 425'
Mix with spoon in large bowl..... 1 pound hamburger
1/2 c. dry bread crumbs
1 tsp. salt
1/2 tsp oregano
Stir in...... 1/2 c. tomato sauce (i use 1c. if you like
it saucier)
Spread meat mixture in ungreased 10" pizza pan
or on the bottom and side of 10" pie pan.
I have used a rectangle pan.
Pour on top...... 1/2 c. tomato sauce (or more)
Spread on tomato sauce......1 can (8oz) kidney beans, drained
Sprinkle 4oz. Cheddar or mozzarella cheese on top. (i have used both)
Bake uncovered 20 minutes.

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups water
6 small boneless skinless chicken breast halves (1-1/2 lb.), 1/2 inch thick
4 cups broccoli florets
1-1/2 cups KRAFT Shredded Cheddar Cheese
1/4 cup OSCAR MAYER Real Bacon Bits
1/2 cup KRAFT Ranch Dressing
PREHEAT oven to 400°F. Combine stuffing mix and water; spoon evenly onto centers of six large sheets of heavy-duty foil. Top each with one chicken breast and 2/3 cup broccoli. Sprinkle evenly with cheese and bacon bits, then drizzle evenly with dressing.
BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place foil packets in single layer in 15x10x1-inch baking pan.
BAKE 30 to 35 min. or until chicken is cooked through (170°F). Remove packets from oven; let stand 5 min. Place one packet on each of six dinner plates. Cut slits in foil with sharp knife to release steam before opening.
