I know how to say "I am taking" -- Yo estoy tomando (ar verbs)
And I know how to say "I am writing" -- Yo estoy escribiendo (er+ir verbs)
BUT how do you say I am going (ir)? I think it's irregular....do you just say Yo Voy?

Yes, but the "yo" in all your examples is not necessary as it is implied in the conjugation of the verb.

It would be just "Voy"
I am taking = Estoy tomando
I am writing = Estoy escribiendo

I looked it up in reference under translation and language tools, I typed I am going and picked English to Spanish and clicked translate and I got voy.

the verb is conjugates in present and gerund

so
so going=yendo

and the first person is who´s doing that so I am= Yo estoy---

the correct translation is:

YO ESTOY YENDO
