Evolution happens every day and has been observed. It's a fact. Whether or not it explains how we got here is a theory but a damned good one at that.

Well, people mostly reject the concept of evolution because it contradicts their religious beliefs. To accept that the species living on Earth today evolved is to believe that much of the Bible does not represent the literal truth. Jonah and the whale? All species fitting into the ark? Genesis in 7 days?
Many people have been taught since early childhood (by respected people such as parents and priests) that their religion speaks the truth. Religion brings a sense of comfort and community to many. To hear an alternative view, however rationally backed by evidence, runs in direct conflict with what many have heard for most of their lives. That can be a scary thing, and it becomes easier to reject than accept.
Religion is based on faith, not evidence. Science is backed up by evidence, not beliefs. As Gould said, science is an inquiry about the factual state of the natural world, religion is a search for spiritual meaning and ethical values. The two are not in conflict. My only issues are when intelligent design is trying to pass itself off as science (which it isn't) or with the teaching of creationist beliefs in a biology class (which is completely inapropriate).

People deny it for two reasons. First, they don't like thinking of themselves as animals. Second, they like thinking of god as a hands on kind of deity who doesn't sit back and watch for billions of years.
I suspect that the first reason is actually the most important to people. If Darwin had said that evolution gave us all that we see around us but that man was the special creation of god the yahoos would have accepted it.

In my opinion, people deny evolution because they don't understand it, and take the words of other people who don't know over those that do. Antiintellectualism. Go figure.

I just watched it happen this spring here in Buffalo, when all of the globe shaped sugar maples bought it in a natural disater, but the cylindrical ones did not.)

You've watched it happen? What species reproduced to create what other new species? Are you sure you didn't just see natural selection, explainable variations within one species? Where are the transitional species?
If you just saw variation in fruit fly that reproduced making more fruit flies you did not see evolution. If you saw a fruit fly reproduce and make something other that a fruit fly, then I'll listen.

Biology class? Go BEYOND your biology book and really look at the theory of evolution...can it stand on its own two legs? I don't think so, not when it comes to the idea of macroevolution and the idea that we all evolved from a common speices.
Microevolution is undoubtedly true in my mind. Macroevolution has major, major problems as a theory. 100+ years of science and archeology had weakened Darwin's ideas, not strengthened them.

because it conflicts with their worldview. just like heliocentrism conflicted with everybody's worldview when it was proposed. Martin Luther thought the notion that the earth revolves around the sun absurd, just because it conflicted with the Bible.
