I bought a large pack of chicken breasts because they were on special offer at the supermarket. I am going to cook some for dinner/sandwiches, but can I use them to make soup?

If so, does anyone have a recipe I can use?

I do a simple recipe of chicken noodle soup, or you can add rice. Chop up the chicken into the sizes you like, either saute in a little butter, margarine, or olive oil, whichever you prefer or add directly to a broth. You can also saute chopped carrots, onions, and celery for more flavor - should take about 10 minutes or so. If you didn't want to saute, instead put the chicken into a large cooking pan with a couple of cartons/cans of chicken broth, you can add carrots, onions and celery if you wish, then boil on a slow boil for about 30 minutes, then add the noodles or rice to the broth. If you like a lot of broth, add water, if not, the noodles/rice will absorb the liquid and the soup will have a richer taste and thick texture. Add seasonings such as salt and pepper as you like to the broth when you add the chicken. If you need more specific instructions or ideas, email me.

Breasts, especially boned ones, don't have as much flavour as the wings and legs, for broth. You *can* use them, but don't expect tons of flavour.
If you do use them for soup, place them in a soup pot with a peeled onion, 3 carrots, some celery (leaves are good), a leek if you like leeks, a bay leaf and salt and pepper. Just cover with cold water, and cover the pot. Bring to a boil and reduce the heat to a simmer for about 45 min. The meat will be cooked before then but you want as much flavour as possible in the broth.
You can chop up the meat and add to the soup, with some angel hair pasta. A squeeze of lemon juice in each serving will give it some extra zing.

Of course you can. I would suggest you make the basic soup, grill or fry the chicken separately - nicely seasoned for added flavour - slice and then add to the soup at the last few minutes before serving.

If the chicken was fresh - ie not previously frozen you can freeze the soup with the chicken in.

Chicken and sweet corn soup
cook chicken breasts and dice into small pieces.
in a pot put 4 cups chicken stock,2 cans of creamed corn i can corn nib lets,teaspoon sugar,dash of soya sauce,add chicken and let simmer for an hour,before serving beat 2 eggs with a fork then slowly add to the soup while soup is bubbling stirring all the time so egg is wispy and cooked

If they are fresh then you can always freeze them and use them at a later date. I am always buying stuff like that when it's on special offer to go in the freezer for later - I like a good bargain!

BTW you can dice the chicken into small pieces and make a chicken and vegetable soup with it. Just peel and chop your favourite veg ( I usually use carrot, leek, potato, sweet potato, onion) parboil them and then add the chicken and stock and then cook in the slow cooker. Add some seasoning of your choice and then either leave chunky or blitz with a stick blender. Thicken up with some cornflour if needed.(sometimes I use some instant mash powder for extra thickness and flavour)

I really like the Chinese takeaway chicken soup and it couldn't be more simple. Make up some chicken stock and put your chopped up chicken bits in with it. Add some sliced mushrooms and simmer until the chicken is cooked. Yummy.

Chicken soup

chicken pieces (about 6 or 7)
5 chicken bullion cubes
6 - 7 quarts of water
1 package of baby carrots - cut up
1 large onion - chopped
2 cans of mushrooms (fresh is better)
1 can of green beans (fresh is better)
1/2 package of egg noodles

Directions: In large pan bring water, chicken, & onions to a boil. Lower heat. Simmer for 2 hours. Take chicken out, and cut it up. Return chicken to pan. Add carrots, mushrooms & green beans. Simmer one hour. Add egg noodles to soup. Simmer about 20 minutes. Enjoy! :)

I only use chicken breast when I make soup. I prefer them bone-in. Boil them in just enough water to cover, with celery and onion. When you remove them to cool...continue to boil the broth. You now have the base for you soup...add anything you want, I usually just empty the fridge of leftover veggies from the week.

I use any chicken parts to make soup.
2 cups of chopped cooked chicken
I can of diced tomatoes
2 cans veg-all
1 sm onion chopped.
1/2 cup of rice or barley
Salt and pepper if desired
Mix all ingrediants, bring to a boil, lower heat
and cook until rice or barley are done.
You can also used browned ground beef in
this recipe, it's very good.

I suppose you could use them to make soup, however you should not use them alone if you make from scratch the stock for the soup.

Homemade chicken stock needs chicken bones and skin to impart the kind of chicken flavor you need.

Make your soup using canned stock and you'll be fine.
