Hi!
I am dating a man from Tennessee and his favorite desert is Chess Pie. I'm from Texas and have never even heard of it before, much less know how to make it! I found one recipe but it didn't turn out right ( At least I think it didn't, it was really runny... I don't know what it was supposed to have looked like though!) and I really want to surprise him by making this. If anyone has a recipe for really good Chess Pie I would really appreciate it! Thanks for your time!

I make this pie all the time. It's my brother's favorite & I LOVE it as well...I' m a native Texan. This is the absolute easiest pie to make...hands down...ENJOY!!!

Buttermilk Pecan Pie

*THE BEST RECIPE, WHICH EVER ONE YOU CHOOSE, SHOULD BE A RECIPE THAT USES BUTTERMILK...IT'S THE BEST IN TEXTURE & TASTE.

This delicious pie is chocked full of pecans
and a creamy buttermilk filling!

Yield: 8 slices per pie

• 1/2 cup butter
• 2 cups sugar
• 2 teaspoons pure vanilla extract
• 3 eggs
• 3 tablespoons flour
• 1/4 teaspoon salt
• 1 cup buttermilk
• 1 9-inch unbaked pie shell
• 1/2 cup chopped pecans

Preheat oven to 300 degrees F.

Cream butter and sugar until light and fluffy. Add 1/2 cup sugar at a time. Blend in vanilla extract and eggs one at a time. Combine flour and salt; add small amount at a time. Add buttermilk.

Sprinkle pecans in bottom of pie shell. Pour custard mix over pecans and bake one hour and 30 minutes at 300 degrees F. The top browns as it cooks, best served at room temperature. (Shield crust with foil at end of cooking time if it is browning to quickly)

8 ounces sweet unsalted butter
2 cups sugar
7 egg yolks, beaten
1 1/2 teaspoons vanilla extract
1/2 cup heavy cream
2 tablespoons cornmeal
Pie Crust, recipe follows

Preheat oven to 350 degrees F.
Cream the butter and sugar. Add yolks, vanilla, and cream. Fold in cornmeal. Pour into unbaked pie shell and bake 35 to 40 minutes. Filling should be firm, but not too crisp.


Pie Crust:
1 cup flour
4 ounces butter
Pinch salt
3 to 6 tablespoons ice water

Put the flour, butter, and salt into the bowl of a food processor. Pulse this mixture until butter resembles small pebbles. Transfer to large bowl and add ice water and mix.
Turn out dough onto a lightly floured surface. Using the palm of your hand, flatten the dough against the cutting board; mixing the flour, water, and butter. Butter pieces should be visible. Press into plastic wrap and shape into disc. Chill for at least 1/2 hour before rolling out to line a 9-inch pie tin.

Yield: 8 to 10 servings

ngredients: 1/4 cup butter 1 1/2 ounces unsweetened chocolate 1 1/2 cups sugar 1 tablespoon flour pinch of salt 1/2 cup milk 2 eggs 1 teaspoon vanilla extract 1 unbaked 9" pastry shell Preparation: Melt butter with chocolate. In a mixing bowl, combine chocolate and butter mixture with sugar, flour, salt, milk, eggs, and vanilla; beat with electric mixer for 5 to 6 minutes. Pour filling into prepared pastry shell; bake at 350° for 35 to 45 minutes, until set. Thank you....!!

Chocolate Chess Pie:

1¼ hours 15 min prep
6-8 servings

1 sour cream pie crust, rolled out to fit 9 inch pie dish (in my recipes)
1 1/2 cups sugar
5 tablespoons dutch process cocoa
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/2 cup evaporated milk
3 eggs, room temperature
1/3 cup butter, melted and cooled
1 tablespoon vanilla extract
whipped cream

1. Preheat oven to 350 degrees F.
2. Prick pie shell with fork.
3. Bake 10 minutes.
4. Set aside.
5. Decrease oven temperature to 330 degrees F.
6. Combine sugar, cocoa, flour and salt in large bowl and mix well.
7. Blend in milk.
8. Beat in eggs, one at a time.
9. Add butter and vanilla and beat until smooth.
10. Pour into crust.
11. Bake until filling is puffed and set, 55-60 minutes.
12. Let cool to room temperature before serving.

The rest are different recipes from different people and web sites. When cooking, I look up several recipes and combine the ingredients I think will work and the amounts that I think will work to come up with a recipe that works for me.

try these,
CHESS PIE - SOUTHERN STYLE

3 eggs, separated
5 tsp. milk
1 1/2 c. sugar
1 tsp. vanilla
1 stick butter
1 tbsp. cornmeal
1 tsp. vinegar

Cream butter and sugar. Add the remainder of ingredients and beat the egg whites and add last. Bake 350 degrees for 40 minutes.

Chess pie
Mix:
1 c. brown sugar
1/2 c. granulated sugar
1 tbsp. flour
Beat in good:
2 eggs
2 tbsp. milk
1 tsp. vanilla
1/2 c. butter, melted
Fold in:
1 c. pecans
bake 40 to 50 minutes at 375 degrees.
