It comes down to two questions: What type of music are you looking for, and who is going to the wedding?
If it's an older crowd, songs like the Twist, That Old Time Rock and Roll, LaBamba, etc. will have them dancing.
If it's a younger generation, then things from Nelly and 50 Cent or whoever will please them.
If it's a mix, then you can play more of the older music at the beginning of the wedding, and the newer stuff near the end, since most of the time it's the younger people who stay to the end.
Also, decide on how many slow songs you want played. Most people don't like it if there's too many slow songs played, but too few won't be helpful either.

Any DJ that regularly does weddings should have a good selection of songs to choose from. You should get with the DJ before the wedding to make sure he has the songs you want played. Feel free to supply some of your own CDs to be played.

I went to my local library and found great ceremony CD's. Some of the typical processional songs are:

Canon in D Pachelbel
Jesu Joy of Mans desiring Bach
Some typical Recessional songs are:
