The rings serve several purposes - sealing in the cylinder pressure, heat transfer, wear control, oil control, etc. Removing one of the rings could result in lost compression, increased oil consumption, and increased engine wear. If the engine would run better with only one piston ring, chances are some clever engineer would have already eliminated it. The company that made the engine wanted to make money, and they don't do that by including superfluous parts.

No always use new engine internals when possible after dis-assembly. Those parts are moving at high rpm and wear and damage isn't always visible to the naked eye. Just because the cylinder walls are clean doesn't mean they are round, or the right size for the rings that came out
