Are you disrespecting them if you don't have some of the food?

No. If you don't like it, no need to eat it. Only some cultures are very strict on taking food that's offered, but in the US & most of Europe, personal preference should be accepted.

In some cultures it would be a huge insult but if it is something you could not eat a bite of I would simply tell them you are a fussy eater and have never enjoyed that dish.

I am a notorious 'fussy" eater and have gone hungry many a time when others made food I could not eat. They did not get upset with me nor feel disrespected. Usually they just tried to find something I could eat.

No I don't think you are,,, now if you have never tried it and you say that then... I think you might be cause you haven't even given it a chance,,, but no one has the right to force something on you you don't want including food,,,, just say it politely.

Only if you say it rudely... if you say it in a graceful way I think generally people would be ok because that is a perfectly normal reason for not eating a food...if they get still get insulted then that is their problem.

I'm that way with anything containing curry...makes me ill, just the smell of it...just be as polite and vague as possible. No, thank you..some will insist though, just keep being polite.
I'd rather eat my shoe than curry..many people love it, including my wife...it's like a food allergy...if they insist just tell them that it doesn't agree with your stomach, no offense.

If you are polite enough, then you can decline. I don't eat seafood, so when people offer it to me I say, " No thank you, I don't eat seafood." and leave it at that. People can't force you to eat a food you don't like. That would be rude.

you shouldn't be but that doesn't mean they won't feel alittle insulted. if they are wise they will not worry about it as they did not ask of your choices before the meal.

No you are not. You can just say, " No thank you, I don't care for ......." The end. They are rude if they insist.
