I've always wondered about that myself! I saw this show called 'Decoding the Exodus' and it gives reasons (very realistic ones) why everything happened. As 'proof' it even shows that almost the exact same thing happened (on a smaller scale,) in some country around there in the eighties. You can find the show through the History channel.
I always thought the Pharaoh was pretty stubborn himself if he refused to let a group of people go away after half the trouble they and their god caused.

Its the herd principle, people will do whatever looks interesting/new rather then reason out that what has been done is often the better choice an by the time they learn it, their surrounded by the herd and can't change back. The original objective generally isn't what is reached unless there is a leader from the beginning who cares about the people, which Moses was. So its not BS, its a deeper lesson then most want to credit the Bible as being capable of.

It is a good question! But I think their rejection of God for the golden calf has more to do with people's natural stubbornness and desire for god to be a god on their terms than anything else. It is hard to believe in a God that you cannot physically see, touch or feel; it's even harder to believe when times get tough if you are not used to trusting Him. Furthermore, it's nearly impossible to believe in a God that demands obedience and worship if you have your own sense of right / wrong and who deserves your devotion. So quick, let's install someone/something else (who we can see) as the Supreme Ruler of my life.
I see so many non-believers on Y!A who claim that they'd believe in God if only... To that I say, "Ha, no you wouldn't" -you are just like every other hard-headed human that has lived on this planet.
If some atheist wants to dispute me on that -they'd really, truly fall down on their knees and worship God, serving Him with all their heart, devoting themselves to other believers and to the spreading of His message if they only have X for proof (whatever X is), I'd love to hear it.
BTW, what I have heard is that the moment that most would receive X, suddenly thet'd need proof Y, then Z, then... you get the idea.

It's just a testament to the wickedness of man... no B.S.
Man chooses on a daily basis to fulfill his own desires. The people of Israel showed exactly that nature of Man. It's amazing how, even after disobeying God time and time again, that God fulfilled His promises to the people of Israel and delivered them from their captors and saved them.

Blame the fickleness of human nature, and wanting a god they could see....much like many people today.
Also, the people had been slaves in Egypt for several hundred years. The slave mentality is not easy to shake off.

The flesh is weak and it seems as you pointed out, fickle. However, eventually they did become obedient. Later disobedient again. Just like children with their parents. They still love their parents, they just want to try things their own way for a while. Parents punish children, but still love them and hope they come around.

same reason so many who watched Jesus do amazing things, like raise the dead, heal the blind, the lame, the demon possessed and still the turned on Him and yelled out crucify Him.
People today are no different. We see God do amazing things and have the record of so many other amazing things He has done, and still you get non-believers who love to criticize those who trust in Jesus.

all of the things you mentioned are true.
God kept giving the Jews another chance and another and another and they kept going back to worshiping false gods...so he sent his son for them to have a living testimony of God's love for them. They killed him.
So God dumped the Jews as His people right there and then. The apostles were to go to the nations and talk to them and baptize them.
Do you have enough appreciation to join God's true worship?
