You can not really avoid your employer if you continue working with him. However, you can reduce his damage if you sit and talk to him deeply about work. He may be asking you too much or you are not able to accomplish well your job. You can tell him to spell out each job to do by having a detailed procedures and actions.

Find one thing (tool, equipment, vehicle...whatever) and **** it right up. Repeat as necessary.
BTW, in the US and Canada, it's federal statute that your employer cannot take pay away from you for "mistakes".

quit...the stress is not worth your health...the minute i did that my blood pressure dropped many points....and my whole body just relaxed...it was a very good feeling....good luck !
