The 3rd pin in both the US and UK are safety grounds. With AC (which is used in both countries) the electricity is trying to get from the "hot" wire to ground - hence why only 2 wires are needed for things to work. The problem is if an appliance malfunctions, the entire metal case could be "hot" and then when you touch it you become the path to ground.
The 3rd pin ties the chassis of the appliance to ground for safety, so if anything were to happen the current would flow through that pin and blow the breaker instead of electrocuting somebody.
One difference is that some items in the US and UK are not required to have a safety ground for various reasons. In the US they omit the 3rd prong whereas in the UK they are more likely to put a dummy pin and not connect it to anything.

The three prong plug has a grounding pin that is connected to the external metal parts of the appliance plugged in. It is a safety feature to avoid shocking the user if they touch that metal outer surface when there is a fault in the wiring or inside the plugged-in item.
Except for the items that are double insulated (no metal on outside to worry about) all US and UK plugs are three pin. There are no legal 2 pin receptacles sold in US and the plugs are made to match the 3-pin sockets.

the 3rd pin grounds the current - if an electrical wire touches the casing of the appliance, the shock will be sent back to the 3rd prong to reach ground, instead of flowing through the casing/person touching casing to get to the ground. It's safer.

uk plugs control phase and neutral by order of connection in socket and plug , also carrying fuse gives it a slight edge on other types . although 2 pin can give less risk of shock as long as there are no earthing point of contact in the home .
