I love veggies, but honestly I have gotten bored with them. I want to eat more since I am trying to lose weight. I want to know some specific ways to make them more interesting that are low cal. Two things that I do already are put lemon-pepper seasoning on my green beans and broccoli; and I sauté spinach and garlic together.

A light splash of vinaigrette dressing or balsamic vinegar added to steamed veggies such as cauliflower or brocolli will perk up the taste with minimal calorie damange. For a more intense flavor, marinate crisp-tender green beans, slivers of red onion, and strips of green pepper in the vinaigrette dressing, and garnish with slivered toasted almonds.

You can sprinkle a little Parmesan cheese and a dab of butter over green veggies to make them more flavorful and still be healthy. Experiment with adding a little teriakyi or soy sauce to your cooked vegetables, too.

Also, don't forget grilling or baking vegetables. Take a square of heavy duty aluminum foil and place any or all of the following in the center: a peeled and quartered potato, chunks of peeled carrot, some slices of red or green pepper, a few mushrooms, some slivers of red onion, and a few small brocolli or cauliflower florets.

Dot with butter and season lightly with salt and pepper. Fold the foil up into a tight package and either bake at 350 degrees or grill over a medium flame until done, turning frequently on the grill. This can be a vegetarian meal in itself with the addition of some breadsticks and/or fruit.

Take some Lipton Onion Soup and sprinkle over vegetables while the are cooking !!! I have done it for years. Also in your spice section at the grocery store pick up a bottle of McCormick Vegetable Supreme seasoning. It has a nice buttery flavor !!!! Try a little Italian seasoning with olive oil !!!

I put garlic butter on mine. When I'm lazy, I use the stuff in a jar that they sell in the spice aisle for you to spread on French bread to make garlic bread. WHen I have time, I just melt some butter w/ some garlic powder, mix well, and drizzle over cooked veggies.

Hollandaise sauce (egg yolk, butter, lemon juice) is great on cauliflower, broccoli, and asparagus, too! Simple to make, just don't let it get too hot.

I use very good veggies, I add fresh herbs and seasoning, olive oil and to finish a little fresh butter. Use what you like and try different seasonings. That is the best part having fun with your food, even better if you and your special someone do this together.

i am not a veggie person, but a friend of mine made some cauliflower and it was dipped and fried in egg. she said she cracked eggs in a bowl and salted it. mixed really well and then dropped the fresh cauliflower in the egg. she then put it in a wok and put a little vegetable oil and fried till golden brown. the cauliflower was very tender and it was really good.

I use celery salt instead of normal salt, and then I grate parmesan cheese over the top, great on cauliflower and broccoli

mmm.fresh green beans...try olive oil with basil or peanut oil with chicken stock topped with sesame seeds. have you tried using white pepper instead of black pepper. fresh asparagus with any fresh italian herb(basil, thyme, or rosemary)

Try adding chichen broth and either chopped onions or ginger or orange zest.
