i have loads of cheddar cheese at home and was wondering for some simple recipes so as not to waste the cheese... something i can bring to the office to share with my friends.. thanks

If it's not too sharp a variety , it's perfect for macaroni and cheese, and a spinach salad with scallions, fresh tomatoes, presauteed yellow peppers and garbanzo beans;
it's also good and simple on microwaved halved baked potatoes,
in a sandwich sliced thin with tuna fish, or lettuce and tomato;
then there's a cheddar cheese soup,
a great recipe with scrambled eggs,
and it's a fine addition to a pizza along with mild black olives and basil.
It can be cubed with lots of things such as leftover chicken for a salad,
or maybe with a slice of roast beef, tongue or Monterrey jack and relish on a sandwich.

this is easy dice the cheese into tiny pieces then get a sauce pan with a tiny bit of olive oil chop an onion very fine and heat it in the oil then get some heavy cream and start to heat it don't let it boil but as it gets hot put the diced cheese into the pan and stir alot while this is going on bring another pot of water to a boil and add some pasta when the pasta is ready add the creamy cheese sauce salt and pepper to taste this is a basic recipe but you can add any number of things that seem interesting to you

Cheddar Soup with Crispy Tortilla Crunch Recipe

3 tablespoons butter
1 medium onion, finely chopped
2 to 3 cloves garlic, finely chopped
1 jalapeno, seeded and chopped
1/2 red bell pepper, seeded and very thinly sliced
3 tablespoons all-purpose flour
6 cups chicken stock
2 cups cream
6 cups grated good quality Cheddar
Salt and pepper
1 tablespoon chili powder, a palm full
1 1/2 teaspoons ground cumin, 1/2 a palm full
4 cups lightly crushed tortilla chips, blue or yellow corn
2 cups store bought chunky style salsa, any brand or variety

In a medium soup pot, melt butter. Add onions and cook 5 minutes. Add the garlic and peppers and cook 2 to 3 minutes more. Add flour and cook 1 minute. Whisk in stock slowly and stir in cream. Bring soup to a bubble and reduce heat to simmer. Stir in cheese and season the soup with salt, pepper, chili powder and cumin. Let soup reduce 10 to 15 minutes over low heat then serve with crushed chips and dollops of salsa.

Mac and Cheddar

1 tablespoon vegetable or olive oil, 1 turn of the pan in a slow stream
2 tablespoons butter
3 tablespoons flour
1 1/2 cups whole or 2 percent milk
3 cups shredded cheddar cheese
1/2 teaspoon nutmeg, ground or freshly grated
1/4 teaspoon ground cayenne pepper, a couple pinches
Salt
1 pound elbow macaroni, cooked 8 minutes or to al dente, with a little bite to it

Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the cheddar cheese on top.

Baked Pimiento Cheese Spread
Tossed Broccoli Salad

Baked Macaroni & Cheese

½ cup heavy cream
½ cup milk
3 Tbsp butter
2 Tbsp flour
1 lb. macaroni, boiled al dente, according to pkg. directions
1½ c ups yellow cheddar cheese
1½ cups Muenster cheese

Heat the milk and cream together in microwave. Melt butter in large saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk. Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.

Baked Pimiento Cheese Spread

1½ C. mayo
4 oz. jar diced drained pimientos
1 tsp. worcestershire
1 tsp. finely grated onion
1/4 tsp. red pepper
8 oz. block of extra sharp cheese, grated
8 oz. block of sharp cheese, grated

Mix together, spoon into greased 1½ qt. baking dish. (I have an oval corning dish I've been using) as it makes quite a bit.

Bake 20 min on 350ºF Serve with cracker, veggies, or baguette slices.

Tossed Broccoli Salad
Yield: 8-10 servings

Salad:
2 lbs. broccoli (chopped)
½ lb. bacon, cooked and crumbled
2 cups shredded cheddar or mozzarella cheese
½ med. red onion, chopped

Dressing:
1 c. mayonnaise
1/2 c. sugar
2-3 T. cider vinegar
salt
pepper

Mix broccoli, bacon, cheese & onion. Mix dressing ingredients, and add to broccoli mixture, tossing to coat. Refrigerate until ready to serve.

Green Rice
3 c Rice, cooked
1 pkg Spinach, frozen, chopped and drained
½ c Cheddar cheese, grated
½ c Onion, chopped
2 Garlic cloves, minced
1 can Evaporated milk
2 Eggs beaten
1/3 c Vegetable oil
½ t Seasoned salt
½ t Pepper
¼ t Accent

In a bowl, combine cooked rice, spinach, cheese, onions and garlic. Mix well. To this mixture add the eggs, vegetable oil, seasoned salt, pepper and Accent. Blend thoroughly. Place the mixture in a greased casserole dish and bake at 350°F for 1 hour.


Hens in a Blanket
1 (9 ounce) package chicken breast tenders
1 (8 ounce) can refrigerated crescent rolls
Cheddar cheese slices

Preheat oven to 400 degrees F. Unroll crescent rolls; separate into triangles. Top each triangle with a chicken tender and slice of cheese. Roll up, starting at wide end. Bake on a cookie sheet for 10 to 12 minutes, or until golden brown. Variations: Use Swiss or pepper jack cheese, sautéed onions, peppers, etc.


Broccoli Casserole
1 1/2 cups hot water
1 pkg (6oz) Stove Top Stuffing for Turkey
3 tbsp Butter
1 pkg frozen broccoli, thawed
1 can (10 3/4oz) condensed cheddar cheese soup
3/4 cup milk

Preheat oven 350 degrees. Mix hot water and butter in large bowl til butter is melted. Add stuffing mix; stir just until moistened. Set aside.
Put broccoli in a 2qt. casserole dish or 9x13 baking pan. Mix soup and milk until well blended; pour over broccoli. Top with stuffing. Bake for 30 mins or until heated through. Make 6 servings.


HAM PIE
4 tbsp. onion, diced
4 tbsp. green pepper, diced
4 tbsp. butter
6 tbsp. flour
1 can cream of chicken soup
1 1/3 c. milk
1 tbsp. lemon juice
2 c. ham, diced

Saute onion and pepper in butter until golden. Stir in flour and when bubbly. Add milk and soup. Stir until smooth. Add lemon juice and ham. Put in deep greased casserole.
--TOPPING:--
1 1/2 c. prepared biscuit mix
6 tbsp. milk
1/2 c. grated Cheddar cheese
Mix together. Roll or pat onto a floured board. Cut with round cutter and lay on top of ham mixture. Bake in 450 degrees for 25 minutes or until top is nicely browned.


Pizza Noodle Casserole
8 oz noodles, cooked,drained
1 pound ground beef
1 T oil
1 can mushrooms, drained
4 oz. pepperoni, chopped
1 can (15 oz.) pizza sauce
2 c cheddar cheese
1 c mozzarella cheese, shredded

Preheat oven to 375. Brown ground beef in oil. Mix in mushrooms, pepperoni, pizza sauce and cheddar cheese. Put cooked and drained noodles in greased baking pan. Pour sauce mixture over noodles and top with mozzarella cheese. Bake 30 - 45 minutes til hot and bubbly.

It really depends on how much you really have. But work with some of the other peoples ideas, it can also be put into your freezer if you still have to much, use plastic wrap, then aluminum foil.
