A basic scalloped potatoes recipe baked in the oven.
INGREDIENTS:
4 cups thinly sliced potatoes, about 6 to 8 medium potatoes
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons butter
2 cups scalded milk
1/2 cup shredded Cheddar cheese
PREPARATION:
In a buttered 2-quart baking dish, place a layer of about 1/3 of the potatoes. In a cup or small bowl, combine flour with salt and pepper. Sprinkle about half of the flour mixture over the potatoes; repeat with another layer of potatoes and the flour mixture and top with remaining potato slices. Dot with butter then pour hot milk over potatoes. Cover and bake at 375° for 45 minutes. Uncover; sprinkle cheese over the top. Return to the oven and bake, uncovered, for an additional 15 minutes, or until scalloped potatoes are tender and cheese has melted. Scalloped potatoes serves 6 to 8.

I'm thinking that boxed au gratin potatos is the way to go here!!! However, if you really want some homemade, here are some ideas:
1. 4 -6 Yukon Gold potatoes, microwaved until tender. Cool
2. 1 cube butter
3. 1 cup milk or half and half
4. 1 16 oz package of Velveeta
5. 1 tsp salt, 1/2 tsp fresh ground pepper
6. 2 cups shredded cheddar cheese
7. 1 cup grated parmesan
Layer 1/3 of the potatoes in baking dish sprayed with cooking oil. Top with 1/3 of the butter, 1/3 of the Velveeta, and 1/3 of the cheddar cheese. Sprinkle with salt and pepper. Repeat layers until you are left with cheese. Pour milk over the potatoes and top with parmesan. Bake at 350 degrees for 1 hour or until casserole is slightly browned and bubbling.

2 tablespoons finely chopped onion
8 ounces shredded sharp Cheddar cheese
2 tablespoons butter
2 cups milk
PREPARATION:
Place half the potatoes in a greased baking dish. Sprinkle with half the salt, pepper, flour, onion, and cheese. Dot with bits of butter. Repeat layer then add milk to cover potatoes. Cover with foil or lid and bake at 350° for 30 to 40 minutes, or until tender. Take the lid off near the end of cooking to brown, or put under broiler for a few minutes.
Serves 4 to 6.

I have a scalloped potato recipe that I make that really isn't cheesy though. Scalloped potatoes usually aren't. But there's parmesan cheese on top. Some people make a cream sauce first, I don't. I make mine in layers of sliced (uncooked) potatoes, butter, flour, onions, salt & pepper & milk, so the sauce makes itself.
One nice sized casserole dish.
Start first layer by placing potatoe slices on bottom
then sm. pieces of butter sprinkled about that layer
then thinly sliced onions
a little s&p
sprinkle flour
Repeat these layers 3-4 times.
Pour milk just to the top
sprinkle top with parmesan cheese.
Bake at 350 deg. till bubbly and brown on top. Check for doneness. Let sit for 5 mins. or so before serving. (check during in case it needs any milk added)
The sauce comes out perfect. Sorry I can't give measurements. It's one of those things I used to make that I learned from mom. I just sort of made it by instinct.

Potatoes Au Gratin
INGREDIENTS:
3 cups diced cooked potatoes
6 tablespoons butter or margarine
3 tablespoons flour
1 1/2 cups milk
1 cup shredded Cheddar cheese
salt and pepper
1 cup soft bread crumbs
PREPARATION:
Potatoes au gratin recipe.
Place potatoes in a shallow, broilerproof baking dish. In a saucepan over medium-low heat, melt 6 tablespoons butter. Remove 3 tablespoons of butter to a cup or bowl; set aside.
To the remaining 3 tablespoons of butter in the saucepan, add flour. Stir to blend well; gradually stir in milk. Continue cooking, stirring constantly, until sauce is thick and smooth. Add cheese and continue stirring until cheese is melted. Pour sauce over potatoes in baking dish; mix gently. Place bread crumbs in a bowl; drizzle with remaining 3 tablespoons melted butter; toss to coat. Sprinkle buttered bread crumbs evenly over potatoes. Bake potatoes au gratin at 400° for about 15 minutes to heat through, then broil until golden brown. Recipe for potatoes au gratin serves 4.

Scalloped Potatoes
Ingredients
1 regular size can condensed cheddar cheese soup
1/2 cup chopped onion
freshly ground black pepper
5 large baking potatoes, peeled
1 cup shredded cheddar cheese
Directions
Preheat oven to 375 degrees F (190 degrees C). Grease a large casserole dish.
In a medium mixing bowl combine the Cheddar cheese soup, onions and black pepper.
Slice the potato into 1/4 inch slices. Arrange one layer of sliced potatoes in the bottom of the casserole dish. Spoon one layer of soup over the potatoes. Arrange another layer of potatoes and then more soup. Continue layering until all of the ingredients have been used. Sprinkle the Cheddar cheese over the top of the casserole.
Bake until the cheese is bubbly and the potatoes fully cooked; approximately 45 minutes.

Peel and slice potatoes. Boil till tender. Remove the water and add shredded cheese and/or cream cheese. Sprinkle salt and pepper to flavor, perhaps some parsley flakes and simmer till all ingredients are thick and aromatic.
