How do you roast garlic for a bread paste.
I have heard of skin on / off I do know how to cook quite well but have never roasted garlic. Any help would be great

and ideas?

cut the top of the garlic head to expose the tops of the cloves, drizzle it with olive oil, wrap it in aluminum foil, and bake it for about an hour at 350 degrees

the cloves will just squeeze out and be spreadable. you might to mix it with some softened butter.

Here's what I do: Use whole "heads" of garlic; don't break them apart into individual cloves.

Use HEAVY DUTY aluminum foil, or a double thickness of regular foil. Build a cocoon around the garlic (you'll have to use your judgment as to how much foil to use), so that the garlic may be completely wrapped. Drizzle with about 1 tablespoon of olive oil per head of garlic. Wrap the packet thoroughly, so that moisture will be trapped inside.

Roast on a baking sheet at 400 degrees for about 45 minutes. Allow everything to cool, so you can handle it, then cut the garlic heads in half laterally (cut across, through the side; not from top to bottom). Then just squeeze the garlic goo out, and use it however you wish.

4 heads garlic
1/3 cup extra-virgin olive oil
3 sprigs thyme, plus 1 tablespoon finely chopped
Grey salt and freshly ground black pepper
8 tablespoons unsalted butter (1 stick), at room temperature

Preheat oven to 350 degrees F.
Cut top from each head of garlic, exposing the cloves. Place heads of garlic (cut side up), on a piece of heavy duty aluminum foil. Pour olive oil over them, and top with thyme springs. Season with salt and pepper. Wrap the foil tightly. Place in a small ovenproof pan, and bake until the cloves begin to pop out, about 1 hour. Remove from the oven and cool.

To remove the cloves, open the foil and squeeze the lower part of the head of garlic. In a small bowl, mash the cloves to form a paste. (At this point the paste can be used or stored in the refrigerator or freezer.)

Add butter and chopped thyme to the bowl, stirring to combine. Season with salt and pepper, to taste.

Toast both sides of the bread, using a hot grill, grill pan, or broiler. Spread the roasted garlic butter paste onto the toasted bread. Serve immediately

I roll the garlic bulb between my palms to loosen as much of the outer paper skin as possible. Then I rinse it & cut off the top to make a flat surface exposing the cloves. Place them in a pan & drizzle w/ olive oil (optional). Roast @ 350 degrees F for about 45-60 minutes.

If you don't want to use oil, then cover them w/ foil for the first 20-30 minutes and put a little water in the baking dish.

Allow the bulb to cool & squeeze out the cooked garlic paste.

Well the traditional method is to use a wide stovetop skillet or wide sideless pan.. and leave the skin on and then dry cook/ roast the garlic over the stove using your skillet or pan... for 1 minute.. shake it a lot .. if the skin starts to blacken in parts its ok.. as long as the garlic flesh doesnt burn
Then when its roasted .. peel off the skin..
If yoy find it difficult to peel.. roast the garlic with the above method without skin.

You can use this method for eggplants and sesame seeds and peanuts too.. for other pastes and sauces and dishes.

Cut the top off of a large bulb of garlic, drizzle some olive oil on top, wrap in foil. Cook in oven. Once done, turn over and squeeze out the garlic (paste). Perfect

here's what i do and its quick you put as many fresh peeled cloves of garlic you want in a small putt pour some vegetable oil or olive oil on them just enough to cover the garlic then heat up the oil so is boiling not a full force boil but enough that it will cook the garlic you have to watch it because you can burn the garlic fast specially is you have a gas stove but you do it slowly and take it off when there golden or almost because remember because it is oil it wit continue to cook but that's what i do and it works out great

I've never roasted garlic but I do cook it in olive oil and that has always worked for me. Use a fry pan and have the heat very low and don't cook it for too long as it tastes horrible if you do.

easy way out. buy the garlic paste, comes in glass bottle at the supermarket. also garlic crushed.
I use either one, which I mix with olive oil and a bit of vinegar in small bowl and then I use a tablespoon or bigger spoon to start spreading on the italian bread and place in oven and you have a homemade garlic bread fast without roasted garlic.

Just buy the stuff from the store ..!
Garlic paste !
Then add what ever pleases you to enhance the flavor or the color.
